In short
Don Tamguso is a pork omakase restaurant a 2-minute walk from Exit 3 of Magok Station in Gangseo, Seoul. 🏷️ Don Tamguso

'Fine dining reinterpreted casually — a whole new world of affordable Magok lunch courses - 🤍'
Don Tamguso, named for its mission to research the best ways to enjoy pork, is a pork omakase restaurant that cooks with a lot of heart. The menu changes every season apparently, and the techniques are sharp while the prices are almost unbelievable • •
Led by a head chef with a Le Cordon Bleu background and experience at top hotels, this is a budget-friendly Seoul omakase restaurant where you can enjoy fine-dining-level cooking for around 20,000 won. Here's my review of the Don Tamguso lunch course.

How to find Don Tamguso: 2 minutes from Magok Station, green roof
Don Tamguso 🏡 with its charming green roof is a great restaurant very close to Magok Station. Called a blessing for Magok office workers, this is a place that works for solo dining, group dinners, dates, and anniversaries alike.

From bar seats with a lovely view of green trees to tables for group gatherings • • at our seat, they'd already set out our name and today's dining order. So fancy ! ! Expectations maxed out - 🩶

What comes first in the 26,000 won lunch course: celeriac soup
Lunch 26.0
No matter how many times I look, no matter what angle, even doing a backflip while I look — this price still doesn't seem real • •
The soup that opened the course. Velvety smooth texture, with the subtle aroma of celeriac, salty bacon, and soft fresh cream coming together in harmony — an incredible flavor.

An orange foam I still remember - 🍊 Sweet chewy dried persimmon, tangy orange, crisp apple, fragrant basil, and salty prosciutto came together for a dish with a refreshing flavor and crunchy texture.

Fragrant shiitake mushrooms and a rich white ragu sauce layered on top of each other, with stretchy mozzarella cheese and a smoky sauce added for a deep, luxurious umami. A place that elevates flavor, letting you appreciate the ingredients in harmony.

The main course: shio koji pork tenderloin

A plate that had my sister and me debating, 'How on earth did they grill this' haha
Shio koji (塩麹) is a traditional Japanese fermented seasoning, combining salt (shio) and koji (rice malt). Mixing rice koji with salt and water and letting it age lets the enzymes in the koji break down proteins and starches, creating a savory, sweet seasoning.

In other words, it's not just salty — it's rich in umami, and thanks to the aging process, the pork tenderloin was truly tender. ㅠㅠ I wish everyone could try it. A truly excellent main • • Plus the sundried tomatoes and pickled cabbage served alongside were so refreshing! My sister said Don Tamguso really knows how to use brightness well.
Select course for two: one burger, one cheonggukjang cream risotto
The select course lets you choose between a burger and a risotto. My sister and I decided to each try one -

The cheonggukjang (fermented soybean paste) cream risotto was completely my style. On a base of savory cheonggukjang cream sauce, with the popping texture of barley and fragrant banpungnamul (glasswort greens, looked lightly fried), topped with Grana Padano cheese. A menu I wholeheartedly welcome as a lover of Korean fusion cuisine.

I bet they chose barley specifically for its crunchy bite. The chefs really are clever — apparently they research things thoroughly to find the best flavors.

A juicy handmade patty, crisp onions, and the flavor of maple syrup and bourbon whiskey combined for a burger that was sweet, bitter, and deeply flavorful all at once. Nothing here comes out half-hearted.
A great cross-section shot
Dessert at Don Tamguso: pavlova and panna cotta

The chef's signature dessert, given as a receipt review gift. A cake-style dessert with a meringue base. They recommended eating it in one bite, and I understood why — the chewiness of the meringue, the soft cream, and the tangy fruit only come together properly if you get all three in one bite. Lovely.

Panna cotta topped with blueberry compote. They could have used blueberry jam, but I think they made it into a compote on purpose, to preserve the fruit's shape and texture. A course that was excellent and generous right to the very end.
