There was a neatly set up self-serve corner on one side of Homilwon Shabu Kalguksu. Sweet sauce and spicy dadagi (chili paste) were laid out so you can season to taste.

The side dishes included geotjeori (fresh cabbage kimchi) and yeolmu kimchi (young radish kimchi), and the kimchi was crisp with well-absorbed seasoning, pairing really well with both the shabu-shabu and the kalguksu.

What comes with the 19,900-won Full-Table Special Shabu Kalguksu?

The ₩19,900 Full-Table Special Shabu Kalguksu looked generous and full from the moment the whole spread arrived.

A large pot came packed with a variety of mushrooms and fresh vegetables. Golden enoki, silver ear mushroom, white jelly mushroom, bok choy, and mung bean sprouts filled the pot, so the broth deepened in flavor the longer it simmered.

The reddish shabu beef that came with it looked to be in great condition too, and the chewy rye kalguksu noodles and fried rice ingredients were all set up at once.

The jjukkumi stir-fry that came as part of the set arrived in a spicy sauce sprinkled with sesame seeds. The cabbage and jjukkumi were stir-fried in big pieces, with a slight smoky char and the plump texture of the jjukkumi still intact.

Adding that spicy kick while eating the shabu-shabu made for a really nice balance.

How does the warm boiled pork (onsuyuk) taste?

The onsuyuk (boiled pork) came out on a separate plate, and the meat was boiled moist and tender with no gamy smell at all.

Paired with the mumallaengi (dried radish) side, garlic, and chili peppers next to it, one bite spreads a clean, nutty flavor through your mouth.

Rye kalguksu noodles and the perilla oil porridge finish

Once you've fished out most of the shabu vegetables and meat, you add the rye kalguksu noodles into the broth and boil them.

Unlike regular kalguksu noodles, these have rye in them, which seemed to make the noodles chewier and more elastic. The broth soaks right in, so even the noodles alone taste great and never bland.

And of course, we finished with porridge. Add rice, gim (seaweed) flakes, vegetables, and perilla oil to the leftover broth and simmer it down until it's just thick enough — a nutty porridge is complete. With the perilla oil aroma wafting and the smooth texture going down easy, I kept eating even though I was already full.
