Magok pork omakase with two New World wine glasses: Don Tamguso

In short

Don Tamguso is a pork course dining restaurant on Magokjungang 6-ro in Gangseo-gu, Seoul. Two friends shared the 58,000-won dinner omakase with the chef's recommended wine pairing, two glasses for 19,000 won, tasting a Sileni Sauvignon Blanc and a Deakin Shiraz, and split one signature burger and one abalone risotto from the select course. Seated at the bar counter watching the chef cook, Don Tamguso works well for an anniversary or a date night.

Great atmosphere, Magok omakase, course dining — I visited "Don Tamguso," a Magok date-night restaurant famous for its pork-based course meals!

Today's chef-recommended wine pairing: Sileni CS Sauvignon Blanc and Deakin Estate Shiraz, both New World wines. New Zealand and Australia — I was excited already.

Tasting the Don Tamguso dinner course, dish by dish

The order of the dinner course is laid out step by step on the paper menu.

Soup: chestnut, button mushroom, cream

Savory and delicious.

The Sileni Sauvignon Blanc has notes of grass and flowers, a light and fresh white wine.

Salad: dried persimmon, orange, apple, basil, prosciutto

A pretty, almost molecular-gastronomy-style salad with prosciutto — good to look at and good to eat!

Lasagna: shiitake mushroom, white ragu, mozzarella, smoky sauce

Lasagna made with shiitake mushroom and smoky sauce

My favorite and the tastiest dish — a lasagna made with shiitake mushrooms and smoky sauce. You might think, wait, is this really lasagna? But swap the lasagna sheets for shiitake and the sauce for a smoky one, and it's still an excellent lasagna. Inside the mushroom is mozzarella cheese and white ragu. Dipping it in the smoky sauce gave it real depth of flavor.

Main 1: shio koji pork tenderloin, button mushroom, sun-dried tomato

The steak that came next was tenderloin aged in shio koji. The meat was really tender, and the grilled mushroom and pickle-ish side cut through any richness completely. The sun-dried tomato worked well with it too.

Rigatoni: chili con carne, nachos, rigatoni

A Mexican-style rigatoni pasta made with homemade chili con carne.

The pasta was rigatoni-style con carne, topped with crispy nachos and cheese for a fun textural contrast. The spicy yet savory sauce soaked into the noodles nicely.

Main 2: pork belly, minari, Sichuan pepper, cumin, fennel

My second favorite — a pork belly fusion New World-style dish. The main pork belly was crispy outside, moist inside. Eating it with the refreshing minari (water dropwort) salad was a fantastic combo.

The second wine arrived — the first time I'd had such a light-bodied red!

Select course: signature burger or abalone risotto

Select course: Signature burger (jambon, arugula, fennel) OR signature risotto (Wando abalone, barley, glasswort, Grana Padano). The two of us each ordered one to share.

From the select course, the abalone risotto had a great popping barley texture. The savory abalone innard sauce topped with crispy fried glasswort was so flavorful. My friend especially loved it.

The signature burger is cute — the restaurant's name is stamped onto the bun like a seal. Inside there's salty jambon, fresh arugula, and plenty of cheese. One bite and it tasted just as good as a specialty burger shop's.

Dessert: panna cotta

The final dessert was panna cotta. I was a bit tipsy from the wine, but it was such a soft, sweet way to end things!

Is Don Tamguso a good date-night restaurant in Magok?

You can feel the chef's care in every single dish. I loved how Korean ingredients were reinterpreted in a witty, Western-style way. The flow of the course felt seamless, never breaking momentum. As a Magok date-night restaurant, definitely stop by when you want a delicious course meal with a glass of wine on a special day.
