I don't know why I've been craving gopchang (beef intestine) so much lately... suddenly I really wanted beef gopchang, so I went to Jinseong Hanwoo Gopchang in Sindang-dong 🐮 This place is almost directly in front of Sindang Station Exit 7, so it's super easy to find! You can spot it the moment you step out of the station, so even a directionally-challenged person like me found it easily haha

Jinseong Hanwoo Gopchang keeps the menu very simple.

There aren't a ton of dishes to choose from — just gopchang, daechang, makchang and a couple of dessert-like finishers — and honestly that kind of focused menu makes me trust a place more haha. We ordered one gopchang, one daechang and one makchang that day! 😎

Side dishes: three house-made kimchis and steamed egg
After we ordered, the basic banchan (side dishes) came out first. One thing that stands out about Jinseong Hanwoo Gopchang is that they serve three house-made kimchis! Mustard leaf kimchi, ponytail radish kimchi, and scallion kimchi all came out, and eating them alongside the gopchang really cut through the richness.


And a steamed egg comes as a default side too! It's soft and warm — the kind of thing you keep spooning up while waiting for the gopchang to arrive haha




The hanwoo gopchang finally hits the grill
And finally, the star of the show!!! The hanwoo gopchang came out pre-seared, and it looked amazing from the start... Not just gopchang but bean sprouts, chives, kimchi, onion and more were all piled on top too, filling the grill and instantly boosting my appetite haha


Staff grill the beef intestines on a timer
The great thing here is that staff grill it for you! With gopchang, if you grill it yourself, it's easy to lose all the fat inside and end up with something tough and chewy — but here they set a timer and come cut it for you right at the perfect moment. So all we had to do was sit back and wait patiently haha

When the timer goes off, the ajumma (auntie) comes over, cuts it up, and grills it to be easy to eat! If you don't wait, you'll get scolded, so watch out!! It ends up tasting even better this way >3<

What hanwoo gopchang full of gop tastes like
I picked up a well-cooked piece of gopchang and tried it — oh... this is exactly the taste beef gopchang should have 🥹 The outside was grilled golden brown and the inside was packed with fat, so the more you chewed, the more savory it got.



Mijeolma sauce: minari and pickled garlic
They also have this thing called mijeolma sauce, made from minari (water dropwort) and pickled garlic, and dipping the gopchang in it changed the flavor completely compared to eating it plain. The savoriness of the gopchang combined with the fragrant minari really cut down the richness! Personally, this sauce left a pretty strong impression on me haha

Gopchang eaten with the house kimchi
I love eating gopchang together with kimchi, and since they serve their own house-made kimchi here, I kept going back and forth between gopchang and kimchi... The scallion kimchi paired especially well with the gopchang. One bite of gopchang, one bite of scallion kimchi, then gopchang again... repeat infinitely haha. If you like drinking, a shot of soju with this would seal the deal...


Finishing with kkakdugi yangbap, 9,000 won
It would feel like something's missing to just stop after the gopchang. So for dessert, we ordered kkakdugi yangbap! It's ₩9,000, and apparently it's made with kkakdugi (radish kimchi), premium tripe, and pickled garlic.

Even though I was already pretty full after the gopchang, the smell of fried rice made room appear again... Isn't this basically the true Korean dessert? Eating the yangbap on a grill with a bit of gopchang fat still left on it made for the perfect finish.

It's a place worth visiting whenever you're craving beef gopchang in Sindang-dong! Next time I'm planning to try the daechang too 👀
