Walk through the door and you're met with bright lighting and high ceilings that open up into a refreshingly spacious hall. At last, the extra-large dak kalguksu arrived with serious presence on the table! A big silver bowl brimmed with a pale, rich broth, and beneath a scattering of chopped scallions sat an entire half chicken, plopped right on top.

I took a first slurp of the broth. Instead of an artificial seasoning taste, it had the deep, rich umami of chicken fat gently rendered from the bones balanced perfectly with nutty perilla powder.
