Stepping inside, the space turned out to be longer and more open than I expected, so it felt comfortable rather than cramped for a drink. that day I was craving something clear and hot to warm me up, so after some thought I ordered the hanwoo suji suyuk jeongol (beef tendon and boiled meat hot pot, ₩24,900) with a chilled bottle of soju! When the pot arrived, I noticed the center was scooped out, holding a generous amount of clear, rich broth.

I later asked staff and was surprised to learn the broth can be refilled for free. It's a clear, pale meat broth — not just mild, but the moment the spoon hits your tongue there's a deep savoriness that hits you, honestly heavenly for curing a hangover 🥣

In the center of the pot were fresh chives, enoki mushrooms, and a generous heap of plump, chewy suji (beef tendon). Suji is a cartilage cut that can easily turn hard or tough if mishandled, but Hwarong Jujeom's suji had no gamy smell at all — it was soft to bite yet wonderfully chewy.

The meat was sliced thin, about 2-3mm, and tender, so it felt light and healthy rather than heavy, like a proper hot pot with boiled meat. The premium hanwoo suji and the clean, soft boiled meat came together seamlessly for a harmonious flavor 🥩

One spoonful of the broth and I thought, "this isn't fair" — it practically demanded a shot of soju, a magic hangover-curing side dish if there ever was one 🍶 It was also the perfect chaser after a cold beer, easing smoothly into soju!
