I stopped by Ubokgeum Saenggalbi Mokpo Namak Branch, a nationwide fresh beef rib franchise that just opened in Mokpo's Namak area~ It's known for its brick-stacked beef ribs, and since the staff grill the meat for you on the charcoal, I could just sit back and eat haha.

Located near Namak Central Park, this staffed-grill BBQ restaurant, Ubokgeum Saenggalbi Mokpo Namak Branch, had an overall spacious and clean layout. The interior had a fairly upscale feel too, so it seemed like a good fit for family dinners or gatherings~

In particular, besides the hall table seating, there were separate room spaces that could fit several people, so it seemed like a solid option for a Namak group dinner or team gathering.

Ubokgeum Saenggalbi menu: lunch specials, fresh ribs and marinated ribs

Since it's open for lunch too, I noticed lunch specials like galbitang (short rib soup) and yukhoe bibimbap right away. The main meat menu comes in two types, beef and pork fresh ribs, each orderable as fresh or seasoned depending on preference. Besides meat, there's a good variety of meal options including naengmyeon (cold noodles) haha.

Side dishes, plus the free steamed egg and dongchimi

Basic side dishes

The basic table setup was laid out quickly right after ordering. It was mostly sauces and side dishes meant to pair well with the meat — pickled green onion, a special onion sauce, and myeongi namul (mountain garlic leaves). Anything else, or extra sauces beyond the basic setup, could be grabbed from the self-serve bar!

Steamed egg and dongchimi served as complimentary sides

Steamed egg and dongchimi also come as standard service, and the steamed egg was genuinely delicious? I cleared it before the meat was even done grilling lol. The refreshing dongchimi was also great sipped between bites of meat, cutting through any greasiness haha.

What I ordered was the signature dish at Ubokgeum Saenggalbi Mokpo Namak Branch — one plate of Ubokgeum beef fresh ribs, 500g. It came out stacked neatly like actual bricks, and it looked seriously appetizing!

Once the meat hit the well-heated charcoal, the smell alone was enough to stir up my appetite~ Best of all, the staff grilled the meat from start to finish, which made things really comfortable. I didn't have to touch tongs or scissors at all — just eat, haha.

Grilled directly over the charcoal, the ribs picked up a subtle smoky aroma that deepened the meaty flavor. Once it was cooked just right, the staff placed it right on the grill plate for us — all we had to do was pick it up and eat! The beef fresh ribs at this Namak staffed-grill BBQ spot let you really enjoy that clean, mild flavor unique to fresh (unseasoned) ribs.

How to eat it: myeongi namul (pickled garlic leaf), shiitake wasabi and the house onion sauce

Dipping it lightly in salt to enjoy the meaty flavor at its purest is nice too, but there were plenty of pairings to play around with. Personally, wrapping it in myeongi namul or adding a touch of shiitake wasabi worked really well for me. A light dip in the special soy sauce added a nice savory boost too.

Special onion sauce made with raw onion and cheongyang chili

But the special onion sauce, made with refreshing raw onion and spicy cheongyang chili, was the best of all! It cut through the richness of the meat perfectly, letting me eat the fresh ribs without ever getting sick of them haha.

Meat deboned and grilled separately on the bone

After we finished the main cuts of meat, the staff carefully deboned the small bits of meat still clinging to the bones and grilled those separately too. It had a chewier texture with an even richer, fattier flavor — a real treat.

Bibim naengmyeon to finish the meal

After eating a good amount of meat, I also ordered a bowl of bibim naengmyeon (spicy cold noodles) for dessert. It came with various toppings plus refreshing ice shavings, making it both spicy and cool to eat.

The noodles had a properly chewy texture, and the moderately spicy sauce was appetizing, making it a great follow-up after the meat. Paired with the beef fresh ribs, it cut through the richness nicely and complemented the meal well haha.
