What time to arrive at Jinseong Hanwoo Gopchang Garak Flagship to avoid a wait
I hadn't been to Jinseong Hanwoo Gopchang Garak Flagship in a while. It's a big beef gopchang spot in the Garak Market Station food alley that's always got a wait, so this time I went a bit early in the evening and got in with zero waiting!


It's been on plenty of food shows, so it's genuinely popular in the evenings — I'd recommend going at a reasonably early hour.


Right in front of the restaurant there's a waitlist board and waiting seats. I arrived at 6 and there were still plenty of open tables, so I walked straight in! Just 30 minutes later, the place was almost full..!

Hanwoo gopchang for two: 220g for under 20,000 won
I always order the same thing, so once again it was beef gopchang for two. Next time with a bigger group I might try the daechang (large intestine) and makchang (abomasum) too... All of it is domestic hanwoo, and they give you 220g for under ₩20,000 — the value is incredible, which is why I keep coming back.

Every branch puts out this same little sign, which just shows how confident they are in the quality of their gopchang~ I've never once been disappointed, so I've never had to ask them to swap anything out ^_^


Jinseong's secret weapon: minari-pickled garlic sauce and three house-made kimchi
As soon as you sit down they set up the table, and give you a generous bowl of the minari-pickled garlic sauce that's Jinseong's signature move. It's loaded with minari (water dropwort) and plenty of garlic, making a special sauce you really can only get here.

That enormous vat of pickled garlic you see at the entrance? All of it goes into this sauce!


The next kicker is this house-made kimchi. There's a cute sticker on it, and apparently all three types are made in-house at the restaurant. The green onion kimchi in particular is genuinely delicious — I get why they even sell it to go. It's ₩20,000 for 700g~! This kimchi makes an insane combo with the gopchang, so you have to grill it together.

My favorite well-seasoned steamed egg also made an appearance! I was so hungry I dove into the steamed egg first without thinking.

The two servings of gopchang I ordered came out with a generous pile of vegetables. As soon as it landed, the flame went on and the timer started-! Since it's already pre-grilled once, the wait is even shorter, which I love.

When the timer goes off, a staff member comes over to flip it and cut it into bite-sized pieces, so all I had to do was sit there and wait — very convenient.

I'd ordered anchovy noodles with gopchang before, and the warm anchovy broth noodles cut through the richness so well that I ordered it again this time.

I really wanted the kkakdugi (radish kimchi) fried rice this time, but between that and the noodles I was already full, so fried rice got a PASS again.... Definitely trying it next time.


The gopchang sizzling away, looking delicious. The vegetables come in generous portions — chives, mung bean sprouts, potato, napa cabbage, kimchi — but you really need to add extra chives and green onion kimchi and grill them together for the full effect...
And grilling the rice cakes until they're crispy? So good.

Once it's nearly done, they cut it into pieces one strip at a time, and with every cut the fat packed inside bursts out — such a gorgeous sight. Gopchang really should be packed with that fat to taste properly rich and nutty.



Is Jinseong Hanwoo Gopchang worth it? Final verdict
Golden-brown, beautifully grilled gopchang — the second they said it was ready, I grabbed a piece, dipped it in the garlic sauce, and wolfed it down with chives, green onion kimchi, and bean sprouts. Every time I bring friends here they're always thrilled, which is why I proudly (?) keep bringing people to Jinseong Hanwoo Gopchang. It's absurdly delicious and cheap, so how could I not keep coming back~! Genuinely recommended to any gopchang fanatic looking for the real deal in Seoul — that's my review of Jinseong Hanwoo Gopchang, Garak-dong's beef gopchang spot :)
