Guwol-dong sashimi restaurant in daeha shrimp season: Veteran Guwol

In short

Veteran General Fish Market Incheon Guwol Branch is a live-fish sashimi restaurant in Guwol-dong, Namdong, Incheon, which says it hand-picks its live fish at the market every dawn. Visiting in daeha (large shrimp) season, the writer and her husband ordered a small salt-grilled shrimp and flounder for one, then made kimchi pancake themselves at the self-serve corner. Butter-grilled shrimp heads and laver wraps with pollock roe sauce are the way to eat here, though weekends at Veteran General Fish Market get packed enough that food arrives a little late.

Visiting Veteran General Fish Market in Guwol-dong, Incheon in shrimp season

Hello~ Today I'm introducing Veteran General Fish Market Incheon Guwol Branch, a live shrimp and sashimi restaurant in Incheon! My husband and I went to a wedding on the weekend, then a café, then rested at home ~ but it's grilled shrimp season these days, isn't it?! So we headed straight for a place near our house ~

Matching couple outfits before heading to the sashimi restaurant

Dressed up neatly in matching couple outfits!! I had my cute squirrel bag my husband bought me at Daiso slung on properly ~ Weirdly, I used to never go out bare-faced, but living with my husband has made me a bit more relaxed — just sunscreen and off we went haha.

Hours: daily 11:00–03:00 / Last order 02:00

How long is the weekend evening wait at Veteran General Fish Market?

But… I guess it's a famous sashimi restaurant in Guwol-dong for a reason, because there were an insane number of people.. seriously not enough seats.. The owner of Veteran General Fish Market has apparently spent 28 years working only in seafood. That's how much expertise they have — that's the point being made.

The owner believes basics come before flashiness. Freshness, thickness, aging, and the taste of the sauces. Sashimi isn't a technique, it's a standard, they believe haha. Only live fish personally selected at the market every dawn is used, and seasonal seafood is served at its best state at the best time, so when asked what's good today, they can answer with confidence.

What we ordered: small salt-grilled shrimp and flounder for one

The menu had so much on it that I just brought a quick summary! We ordered salt-grilled shrimp (small) and flounder (1 person)! Ah, this is my Nth visit here. I honestly lost count of how many times we've come..

Kelly beer and self-made kimchi pancake

Cass sold out, and kimchi pancake you grill yourself

Cass sold out.. is this real life ㅠ give me back my Cass ㅠㅠ Sadly ordered Kelly instead.. The kimchi pancake (kimchijeon) you make yourself at the self-serve corner! I made mine — the shape's a bit off but it tastes good lol. There were SO many people that food took a while to come out ㅠㅠ

Is a small salt-grilled shrimp order enough for two?

The small salt-grilled shrimp arrives! At first glance I thought the portion looked small, but absolutely not, never. Even in the middle of the rush, the ladies working there really looked after us so we got to eat the shrimp at the perfect timing haha. If you grill it too long the shell doesn't peel off well! Thanks again to my husband for peeling shrimp for me today ~~

Autumn is such an exciting season. Not only is shrimp, which I love, in season, but there's something dreamy about the cooler air, you know? Even the sunsets seem prettier ~ Autumn will fly by fast again so I'm planning to properly enjoy it to the fullest!!

How to eat the butter-grilled shrimp heads

You can't skip the butter-grilled shrimp heads when eating grilled shrimp, right?! When the heads are too hard, it hurts your palate,, a friend taught me a way to eat only the soft parts and I always do it that way now — genuinely a great tip,, If you dislike the whiskers or legs, feel free to snip them off with scissors before eating ~~

Flounder for one with pollock roe sauce laver wraps

Flounder sashimi for one arrives! This much is plenty for us ~ I'm not really the type to eat a huge amount of sashimi ~ This Guwol-dong favorite, Veteran General Fish Market Incheon Guwol Branch, believes the taste of sashimi comes from the taste of the sauces! Maybe that's why the sashimi is so fresh.

But maybe I still don't fully understand the taste of sashimi, because I find it tastiest wrapped up.. haha. Here they give you something like a roe (myeongnan) sauce, and it's delicious wrapped in laver, so please try that combination at least once!!
