Inside Hanyang Dak Kalguksu: seating and smart ordering
The interior mixes gray walls with wood-toned furniture, so it feels clean but cozy at the same time. The ceilings are high and the track lighting drops softly over each table, which made it nice for photos too.

The seating mixes wooden tables with dark gray sofa-style seats, so there's everything from solo seats good for eating alone to group tables for bigger parties. Every table has a smart order tablet installed, so you can order right away without waiting in line — really convenient.

Large photos of the signature dishes — dak kalguksu (chicken noodle soup), kalguksu, and dakbokkeum sujebi — hang on the walls, making it easy to pick your order at a glance. There were also photos showing the process of kneading dough and cutting the hand-pulled kalguksu noodles, which really conveyed that this is a place that makes its own noodles. Hanyang Dak Kalguksu chicken noodle soup (11,900 won): how it tasted
Because the chicken broth is simmered for over 12 hours, the color of the soup was rich and deep from the start. One spoonful in, it was clean with no gamey smell but full of umami — I kept going back for more.

The soft egg had naturally dissolved into the broth, and the lean chicken breast was so tender it pulled apart along the grain. With savory seaweed and fragrant green onion added on top, it was a bowl with deep flavor without being too intense. The noodles were on the thicker side — but well-cooked, so they were great to slurp up with the broth.
Dak gomtang chicken soup (11,500 won): how it tasted

The broth was thick and deeply extracted, so the savoriness hit right from the first spoonful. The subtle herbal aroma was just right — not overwhelming — and it left my stomach feeling settled.
The chicken thigh meat came off the bone easily and was tender to chew, and eating it together with the broth felt like a hearty, filling meal. It seemed like the kind of dish you'd crave on a chilly day or when you're not feeling your best.
There was also more glass noodle in it than I expected! Adding some of the bossam pork into the gomtang made it pretty good too.
Mini suyuk boiled chicken (10,900 won): how it tasted

The portion was just the right size to pair with kalguksu. Boiled with medicinal herbs, it had no gamey smell and a subtle herbal aroma.
That said, one letdown — I was hoping for something moist, but the bossam turned out dry! It was thin and the pieces were small, which actually worked out because dipping them in the kalguksu broth made them moist again — made me wonder if that's actually how it's meant to be eaten!
