Cheese-topped braised ribs with old kimchi in Busanjin: Sinchon

I was craving braised short ribs after a while in Seomyeon, and the place I found was Sinchon Yangpuni Seomyeon Main Branch! This spot has been running at the same location for a whopping 20 years, so if you love galbijjim (braised short ribs), you've probably heard of it or already been:-)
Personally I'm not a huge fan of the artificial heat from capsaicin, but Sinchon Yangpuni advertises NO capsaicin and says it makes its heat with its own recipe, so I went to check it out with my currently-off-alcohol-because-pregnant friend💓

📍Sinchon Yangpuni Seomyeon Main Branch is close to Exit 2 of Seomyeon Station on the subway, and it's also a convenient location if you're coming from Seomyeon Lotte Department Store.

It's not visible right from the main road, so you might wander a bit the first time, but there's a big sign at the entrance of the alley, and following that made it easier to find than I expected.
Even though we went at a fairly early dinner hour, most of the tables were already full! There were baskets next to the tables for coats, bags, and luggage, which was convenient.


Spice levels and tips for enjoying the ribs
There were also handy tips for how to best enjoy the galbijjim and explanations of each spice level posted, which was great for first-time visitors like us, and I liked being able to check the heat level before ordering🙂


No capsaicin, aged sauce, 100% domestic pork rib bones
✔What made me like Sinchon Yangpuni even more was the explanation of the sauce — instead of gochujang (red chili paste), they age sun-dried salt, soy sauce, and salted shrimp together to make it. It's aged for anywhere from 15 to 60 days so the flavors can blend, and the explanation was that a sauce made quickly can taste sharply spicy, but this aging process gives it depth. Above all, sticking to the same method for 20 years and using 100% domestic pork rib bones gave me confidence.
✔One more killer tip I want to share: if you book through Naver Reservation, you get a free ₩10,000 seafood potato pancake. If you're planning to visit anyway, booking ahead is clearly the better deal🙂

We ordered one serving each of yangpuni galbijjim (two total) and picked the Jeolla-do aged kimchi topping without a second thought. (Who can resist aged kimchi with braised ribs, haha.) And the other thing we ordered was the pour-over cheese! Spicy ribs and cheese is a combo that's hard to mess up, so we added that too😆


The banchan (side dish) spread
✔The basic banchan lineup was acorn jelly with soy sauce dressing, pickled onions, mayo sauce, perilla leaves, and corn salad, plus a warm soup on the side. The sides paired well with the rich, spicy ribs, making them perfect for snacking on in between bites😋

The moment the ribs arrived, the visual alone looked incredibly appetizing — big chunks of aged kimchi piled on top of the ribs, with plenty of bean sprouts and green onion, looking spicy and savory just from the sight of it.
Once the ribs were set down like this, a staff member came over and cut everything up, prepping it all into easy-to-eat pieces🤗

Once it was all cut into nicely bite-sized pieces, the final touch was pouring on the cheese we'd ordered, generously, all at once🤍


Wow, this visual practically demands a drink! My pregnant friend went with cola, and I clinked a glass of makgeolli (rice wine)❤🤍


How it tasted — spice with depth
The ribs were cooked so thoroughly that the meat came apart easily with chopsticks, and the sauce had really soaked into the meat. At first the spiciness hit hard, but it wasn't just heat — there was real savory depth to the sauce itself.

Especially the aged kimchi, simmered thoroughly in the ribs' sauce and eaten with the meat — it added a tangy, deep flavor, and personally I really loved this combination.

Wrapping bean sprouts, ribs, and aged kimchi in a perilla leaf with a bit of cheese on top made the spiciness gentler and added a nutty richness — a whole different way to enjoy it. It looks intensely spicy from the outside, but once you actually eat it, it's not just heat — the sauce has real depth, so you keep going back for more.

The chewy rice cakes mixed in were also seriously delicious💓 Bite after bite, the ribs disappeared in no time😮


Finishing with self-made fried rice
After eating a good amount of the galbijjim, we finished it off with self-made fried rice. Frying rice, seaweed flakes, and leftover rib bits in the remaining sauce — turns out a Korean meal really does end with fried rice.


The spicy sauce soaked properly into the rice, so even full, our spoons kept going. My pregnant friend ate really well too, which made me happy😃

Wrap-up — how to order on your first visit
If you're looking for a longstanding go-to spot in Seomyeon or craving spicy braised ribs, Sinchon Yangpuni Seomyeon Main Branch is worth a visit! Running at the same spot for 20 years already says a lot about how loved this place has been😄 I especially liked that they make the sauce their own way without capsaicin and stick to 100% domestic pork rib bones.
If it's your first visit, I'd recommend checking the spice levels and the tips for eating it well first, then ordering the Jeolla-do aged kimchi and pour-over cheese toppings together💗 And since there's a seafood potato pancake perk with a Naver reservation, make sure to book ahead before you go😀
