Galbi siraegi gukbap (short rib and dried radish green soup) was the dish I ordered, and it's the restaurant's signature gukbap.

The moment the dish arrived, the nutty aroma of perilla wafting up really got my appetite going. From the very first spoonful, that nutty flavor spread all through my mouth.

The short ribs came out with big bones and thick cuts of meat attached,

braised until tender enough to easily snip into bite-sized pieces with scissors.

The meat had no gamey smell at all and the lean parts were moist. On top of that, there was plenty of savory, nutritious siraegi (dried radish greens) mixed in, so it felt like I was taking care of both flavor and health at the same time.
