I used to run my own gukbap restaurant, so I'm pretty strict about judging Daegu gukbap spots and rarely go to just any place. But I heard there was a gukbap restaurant near Gamsam Station that uses real Korean beef bone broth and prepares almost every ingredient — even the side dishes — with domestic ingredients, so I went to check it out. This is Mubokka Gukbap Gamsam Branch.

They proudly display a sign saying they use nothing but 100% beef bone broth and water — nothing else added — and they even have Korea's first patent registration for bone broth. That's a real, genuine Korean beef bone broth gukbap restaurant. There's also a thank-you sale sign for ₩3,000 soju and beer, and a sign for unlimited refills of pork offal — liver, lungs, heart, sundae (blood sausage)!

The parking area isn't huge, but as long as you avoid peak hours you should be able to find a spot.

The inside was clean and tidy, and with the open kitchen you could trust the hygiene too.

The menu and what we ordered: Mubokka set meal and solo suyuk set

At Mubokka Gukbap Gamsam Branch, the pork gukbap is ₩9,000, and the solo suyuk set (pork gukbap + 120g suyuk) is ₩19,000. I went with my mother, so we ordered the Mubokka set meal (₩11,000) and the solo suyuk set.

Besides these, there were plenty of other dishes for different tastes — jjamppong sundubu gukbap, siraegi gukbap, and more. There were also great menu options for drinking snacks like bossam (boiled pork wraps) and hot pots. And yes, that ₩3,000 event for soju, beer, and makgeolli was still going! It looked like the seasonal menu items, like naengmyeon (cold noodles), were about to end their season soon.

Where do the side dishes and the suyuk come from?

Mubokka Gukbap Gamsam Branch prepares its kimchi and diced radish kimchi with domestic ingredients, and they recently switched to domestic pork shoulder for the suyuk. These days there's a lot of talk about Chinese-made kimchi, diced radish kimchi, and red pepper flakes, right? And yet plenty of restaurants still use them.

A lot of owners make that unavoidable choice because of the price difference. I don't know if this is true across the whole franchise, but this particular owner clearly has real sincerity and pride in the food served to customers. They even let us compare it directly to the previous Chilean pork belly suyuk.

Just from the diced radish kimchi and kimchi alone, you could taste that clean, deep domestic flavor.

How did the beef bone broth and the suyuk taste?

Mubokka Gukbap Gamsam Branch boils the meat twice a day — once in the morning and once in the afternoon. That means you always get fresh meat boiled that same day, which I loved. As a former gukbap restaurant owner, I could tell from just one bite the depth of the bone broth and the quality of the meat.

The suyuk was thin, with just the right texture — filling and satisfying, giving you that real meat-eating pleasure.

The amount of meat in the solo suyuk set was almost more than the broth itself. There was glass noodle in there too — really hearty and delicious-looking.

Final verdict on Mubokka Gukbap Gamsam Branch

The owner was so genuinely passionate about the food, the customers, and the restaurant that they explained a lot of things to us — unfortunately I couldn't remember all of it. But to sum it all up: even if you've been to another Mubokka Gukbap branch, this one really made me feel that despite being a chain, the quality can vary a lot branch to branch depending on the owner's dedication. I'd strongly recommend making a trip to Mubokka Gukbap Gamsam Branch for a meal.
