How did sundae gukbap begin?
Sundae gukbap, the soul food that warms tired bodies and minds, carries a long history shaped by its era. Here's a rundown of how sundae (blood sausage) and gukbap (soup with rice) came together in the form we know today!
Where does sundae itself come from?
The Goryeo-era transmission theory (Mongol origin theory): One widely known theory says it arrived during the Mongol invasions of late Goryeo. Some believe a dish called 'gedes' — pig intestines stuffed with rice and vegetables, eaten by Mongol soldiers as field rations — took root in Korea.
Joseon-era records: The late Joseon cookbook Siuijeonseo specifically describes 'doyaji sundae' (pig sundae) along with instructions for making it. Back then, sundae was packed with meat, vegetables, and grains, making it more of a luxury food reserved for special feast days.
How sundae gukbap became an everyday Korean meal
The Korean War and refugee history: The form of sundae gukbap we eat today really developed around the Korean War. During those hard, hungry times, refugees gathered in areas like Busan and made use of cheap, easy-to-find pork offal and sundae, ladling it into broth — and that became the origin.
A hearty meal for working people: By simmering pork offal that would otherwise be discarded together with sundae into a rich stock, it became a top gukbap dish that let ordinary people get protein and nutrition affordably.
Sundae gukbap in Korea today
The spread of glass noodles: After the 1970s, easily available glass noodles became popular as filling for sundae, evolving into the familiar sundae and sundae gukbap we know now.
Menu and what was ordered at Mubokka Gukbap Gamsam Branch
Looking at the menu board on the wall, they offer pork gukbap, sundae gukbap, and a variety of other soups and dishes. On this visit, I ordered sundae gukbap (₩9,000) and a side of maetbogi sundae (₩8,000), a great tasting portion to pair with it.

The free side dishes on the table
The basic side dishes that go perfectly with gukbap are served neatly. Crunchy chive salad (jeongguji), sweet-and-spicy kkakdugi, and napa cabbage kimchi come alongside chili peppers, garlic, and ssamjang, all of which really bring out the flavor of the soup.

Sundae gukbap, 9,000 won: how was the broth?
The sundae gukbap at Mubokka Gukbap Gamsam Branch arrives bubbling in a stone bowl, and the milky, rich broth with no gamy smell is outstanding.

Stirring in plenty of the chive salad that came as a side made the broth taste even deeper and cleaner. It's loaded with meat and sundae, so it stays filling all the way to the last spoonful.

Maetbogi tasting sundae, 8,000 won
The maetbogi sundae is a handmade-style blood sausage packed full inside, with vegetables and meat blending together for a savory flavor that gets better the more you chew. It was a great side dish that added heartiness at a low price whenever the gukbap alone felt a bit lacking.
Is Mubokka Gukbap Gamsam Branch worth a visit?
Mubokka Gukbap Gamsam Branch is a great place to visit near Gamsam Station whenever you're craving a clean, rich bowl of gukbap. Thanks to the deep, gamy-smell-free broth and generous portions, I had a very satisfying meal. If you want a hearty meal, I recommend stopping by Mubokka Gukbap!
