The octopus bibimbap arrived first, served in a heavy stone pot that keeps the heat for a long time. The moment I lifted the lid, spicy aroma with a hint of smoky char wafted out, sparking my appetite. Inside, plump, spicy stir-fried octopus took center stage, topped generously with flying fish roe, pickled radish, perilla leaves, enoki mushrooms, and baek-kimchi (white kimchi).

Mixing everything together for a big bite, the chewy yet tender texture of the octopus really stood out. The spice wasn't overwhelming — it was pleasantly spicy with a clean finish, the kind you keep going back for without tiring.

The popping flying fish roe, crunchy pickled radish, and fragrant perilla leaves came together for layers of flavor in every bite. If you love spicy meals, this is a must-try at Bibisam, one of Gwacheon's best lunch spots.
② [Set] Hanwoo yukhoe bibimbap + hanpork tteokgalbi

The second dish was the hanwoo yukhoe bibimbap set, a showcase of pure savoriness. Made using the Hwangdeung toryeom method, it had a genuinely upscale presentation.

Fresh namul (seasoned vegetables — bracken fern, spinach, bean sprouts, mushrooms, egg strips, etc.) were beautifully arranged in the bibimbap bowl, alongside a generous separate plate of vivid red seasoned hanwoo yukhoe (beef tartare).
Piling the yukhoe on top of the bibimbap and mixing it all with the gochujang sauce, the nuttiness of the vegetables and the tender, silky texture of the fresh hanwoo yukhoe blended into a truly deep, classic Korean flavor. Definitely a rich, high-quality bibimbap befitting Bibisam's reputation in Gwacheon.
③ The heart of each set: hot-plate hanpork tteokgalbi
The 'hot-plate hanpork tteokgalbi' included with both sets didn't disappoint either. Served on a hot mini griddle, it stayed warm throughout the meal, topped with a beautifully cooked sunny-side-up egg (soft yolk).

I broke the yolk over the tteokgalbi and cut into it alongside the sweet-savory sauce — the thick meat patty released juicy, moist flavor with every bite. Completely free of any gamey taste, with a soft, sweet sauce well soaked in, it's the kind of dish that's universally loved from kids to adults. The sweet-savory charm of the tteokgalbi paired beautifully with the spiciness or savoriness of the bibimbap, rounding out the whole set perfectly.

The crisp, refreshing baek-kimchi served as a basic side dish did a great job cleansing the palate between bites.
