Pregnant-friendly salt-grilled yang gopchang and naengmyeon: Bupyeong

The Ham couple's diary paid a visit to Bupyeong Yang Gopchang, a well-known yang gopchang (grilled beef tripe and intestines) spot in Nampo-dong.
In the middle of a scorching summer I found myself craving stone-pan seasoned tripe... but after visiting a place that adds udon or glass noodles as extras, what I suddenly wanted instead was salt-grilled — savory and only getting better the more you chew.

There's only a ₩5,000 gap between sizes, so honestly, even with two people I'd personally want to order medium! Since it's only ₩5,000 more. And large feels like too much anyway.

Salt-grilled doesn't come with noodle or rice extras
Stone-pan seasoned and tripe hot pot both allow fried rice or noodle add-ons, but salt-grilled doesn't — so instead you can choose a side of mul naengmyeon, bibim naengmyeon, or yeolmu mul naengmyeon.

The vibe and seating
It's a well-known restaurant — you can see lots of celebrity autographs on the wall.

There are two adjoining storefronts. Our side was completely full, but since there are so many tables and turnover is fast, it seems like you only wait a little before a seat opens up.

Ordering medium salt-grilled and zero-sugar cola
We ordered a medium salt-grilled and two zero-sugar colas. Salt-grilled really calls for somaek (beer-and-soju mix), but... I'm... I'm!!! pregnant, so I can't drink, and consoled myself with cola instead.


The basic side dish spread
- A base soup that looked like siraegi doenjang guk (dried radish green soybean paste soup)?
- Ganjang sundubu (soft tofu in soy sauce)
- Peppers, ssamjang (dipping sauce), pickled radish wraps
- Geotjeori (fresh kimchi) and garlic
- Cabbage salad topped with a savory dressing
- Garlic-heavy seasoning sauce
- Soy-marinated onions
The staff grill the salt-grilled tripe entirely for you, so all you have to do is sit back comfortably and eat.


Yang gopchang gets tastier the more it's grilled, so I got to work grilling it diligently.

Watching it get grilled so comfortably for us hahahahahaha, hurry up and grill it, boss! I'm getting dizzy over here. They say a familiar flavor is the scariest — knowing how good it is made it so hard to wait.



The staff were also friendly and grilled everything with real care.

Eating in order starting with the king oyster mushrooms
They say to start with the king oyster mushrooms cooked evenly in the tripe fat, and honestly, once they're seared through in that fat, even the mushrooms taste like meat.


They cut everything up neatly, ready to eat.
Watching the intestines grill up golden brown, I was seriously craving somaek. My husband doesn't usually say what he wants to eat, but today he was like, should we get salt-grilled?? Guess it's just that good hahahaha

They said you should eat this part first. They set it off to the side — grill it too long and it gets tough, so eat it first.
Right into the second round on the grill. Seeing this tender, plump intestine doubles the happiness.

By the second batch, a film of oil has already coated the pan, so everything looks even more golden brown.


Weekday patbingsu service and yeolmu mul naengmyeon
Visit on a weekday and they'll give you patbingsu (shaved ice dessert) too. If you're drinking, finishing a bowl of this could practically count as round two.

I wanted something cold and soupy, so I ordered the yeolmu mul naengmyeon (cold noodles with radish greens).


The noodles in the yeolmu mul naengmyeon seemed to be made with chlorella — nice and healthy, and easy on digestion too. Since salt-grilled doesn't allow noodle or rice add-ons, I finally got to try the naengmyeon, and it went down perfectly, slurped up with that cool, refreshing broth.
