Staff-grilled offal and heart at Bupyeong Yang Gopchang, Busan

Today I'm bringing a review from a yang gopchang (beef tripe and intestines) trip to Nampo-dong! I've always loved gopchang and daechang dishes, so this time I went to Bupyeong Yang Gopchang near Gukje Market in Nampo-dong. If you're looking for a good Nampo-dong restaurant, take a look haha.

Packed even outdoors at 4:30pm

I visited at the fairly early hour of around 4:30pm, but there were way more customers than I expected! In particular, a lot of people were eating at the outdoor tables in front of the restaurant. With weather like this, eating at an outdoor table seemed like it would have a nice atmosphere too haha.

On the way in I spotted the Kelly & Blue Ribbon Survey double-impact restaurant selection marker!! I went in with high expectations haha.

Choosing the menu — salt-grilled or stone-pan seasoned

The signature menu has three options: salt-grilled, stone-pan seasoned, and tripe-intestine hot pot! There were two of us, so we got the stone-pan seasoned small size with added udon noodles. I wanted to try the salt-grilled too, but... I couldn't give up the fried rice haha.

After ordering, we waited a bit and the basic side dishes were set out. Cabbage salad, pickled onions, radish wraps, stew, soft tofu, fresh kimchi — a good variety of side dishes that pair well with gopchang. I personally loved having palate-cleansers like the pickled onions and radish wraps in between bites.

And of course yang gopchang can't happen without soju, so we ordered a bottle :)

Stone-pan seasoned — staff grill it for you

And finally the main dish arrived ✨ Intestines, tripe, and heart thickly coated in red seasoning, piled generously on the stone pan along with potatoes, onions, and king oyster mushrooms.

The red seasoning was really coating everything, and just looking at it made me want to dig in right away lol.

I thought we'd have to flip and cook it ourselves, but the staff kept coming by to grill it perfectly for us. So there really wasn't much for us to do. It was more like sitting back, watching the yang gopchang cook away deliciously next to us, and sipping soju!

There was also a shield set up around the burner, so it wasn't as hot as I expected while eating.

Even with customers constantly coming in, the interior was quite spacious, so it never felt cramped even when busy.

Once the gopchang was cooked enough, the staff brought over the added udon noodles and mixed them in so the seasoning would soak in well. I really love udon noodles, so my eyes lit up ✨ at this point. Watching the red seasoning soak into the udon noodles looked so delicious haha.

How were the heart, intestines, and tripe

I tried the heart first, and with the moderately spicy red seasoning, the heart was tender rather than chewy — really delicious.

It was exactly the kind of heart texture I like, so it won me over from the very first bite haha. A bite of heart followed by a shot of soju — wow, this is it...❣️

I also tried the intestines and tripe, both well-coated in seasoning and delicious, and the soju really went down smoothly lol.

And the udon noodles I was most excited about! Chewy, springy noodles thoroughly soaked in seasoning. Since I already love udon noodles, this really won me over.

Plus it was packed with potatoes, which I love, so I was happy the whole meal haha.

But we couldn't end there! Even though we were pretty full, we added fried rice as the final finish. They fry the rice right on the pan with the leftover seasoning, and honestly, that combination can't not be delicious...!

We ate the fried rice down to the last bite and even scraped up the crispy bits stuck to the bottom of the pan with a spoon ❤️🔥

We were really so full, but it was the kind of taste that kept us eating to the very end. I don't think I can ever skip fried rice after gopchang lol.

To sum up

If you're looking for a good yang gopchang restaurant in Nampo-dong, or want to enjoy delicious gopchang with a shot of soju, this place is worth a visit. It was especially convenient that the staff grilled everything for us, and we got to eat a hearty full course from yang gopchang to udon noodles to the fried rice finish :)

Personally, adding the udon noodles was a total masterstroke! If you love seasoning and love noodles, definitely add the udon noodles haha.
