Grilled tripe for two on the street stalls: Bupyeong Yang Gopchang
In short
Bupyeong Yang Gopchang is a street-stall (yajang) style grilled tripe restaurant on the offal street in Nampo-dong, Jung-gu, Busan. Two people shared a medium stone-pan seasoned platter plus added udon noodles, ate through beef heart, tripe, and large intestine as staff grilled and cut everything for them, and three bottles of soju and one beer disappeared without a trace. It's a place that works whether you sit outside on a nice day or inside when it's hot.

Off to Busan's Nampo-dong offal street
When you say Busan, you gotta think Jagalchi and Nampo-dong, right? Grilled tripe was something I really wanted to try in Busan. There's salt-grilled and there's seasoned-grilled, and since Busan is known for the seasoned version, I decided to go with that and headed to a famous grilled tripe place in the Nampo-dong alley, where the street stalls were fully set up because the weather was nice.
Personally, I liked Busan way more than Jongno 3-ga, which got so famous on social media that it's basically overrun now. Nampo-dong is the real deal.

Outdoor street stall seats and indoor seats
Bupyeong Yang Gopchang has a spacious indoor hall, plus a lot of outdoor seating too. As someone who loves outdoor street-stall (yajang) dining, I was very satisfied. If you want to hit up the street stalls in Nampo-dong or Busan in general, get off at Nampo Station or Jagalchi Station. A must-eat grilled tripe spot in Nampo-dong.

The ajumma (older lady staff) was doing just the right amount of pleasant hustling to pull people in, and a lot of folks got lured in as if under a spell.
A must-eat grilled tripe spot in Nampo-dong. The outdoor seats are great, but the air-conditioned indoor seats were packed too.
Menu and prices
There's salt-grilled and seasoned stone-pan grilled, each in small/medium/large, at ₩40,000 / ₩45,000 / ₩50,000. Two people could easily manage the small size. Salt-grilled is the familiar style, while the stone-pan version is grilled in seasoning. I only get this in Busan.
The street-stall vibe here is amazing. Jongno 3-ga has gotten way too crowded lately and it's kind of off-putting, but Busan felt just right.
The wet towel had 'Busan' printed on it — for some reason that felt very charming, haha.

We ordered an 'adult juice' (soju) and the medium seasoned stone-pan platter. There's also salt-grilled (large/medium/small around ₩40,000 range) and hot pot in large/medium/small. Plus water naengmyeon, spicy naengmyeon, steamed egg, and all kinds of noodle add-ons. Prices are reasonable across the board so you can order a bunch of things. Figured udon noodles would go great with the seasoning, so we added that.

Honestly just breathing here counts as a side dish for drinking. The atmosphere is so good. Being the tail end of summer, people seemed to prefer the outdoor seats.

If you're someone who loves drinking, you probably shouldn't live in Nampo-dong…
Basic side dishes and the medium seasoned stone-pan platter
Basic setup came with cabbage salad and pickled onions. Also doenjang stew, sliced radish pickles, and something like seasoned lettuce and radish.
There's a cover to block oil from splattering, haha — apparently the seasoned tripe sizzles and splatters a lot when it boils on the stone pan.
At first, raw tripe, large intestine, and beef heart come out tossed in seasoning. It takes quite a while to cook through.

An aggressively good-looking visual. They put up covers all around so it doesn't splatter and you can grill it comfortably. It takes longer than expected to cook, so I'd recommend deciding what you want and ordering as soon as you sit down.

Looks so delicious, haha — this is the kind of place where you end up finishing a few bottles before the food is even cooked... the whole alley is nothing but grilled tripe restaurants.
This one's the salt-grilled version. A lot of people order that too, and it looked really good. There were a lot of Japanese visitors in Busan — kind of like when we go to Osaka, maybe.
Staff grill it and cut it for you
Wow, the friendly staff come over and grill it for you. It slowly cooks to perfection like this. Staff come by and cut it up for you too, haha. A must-eat grilled tripe spot in Nampo-dong. Makes me want to live in Busan.

The tripe cooking up so deliciously. They even do the scissor work for you, haha. A must-eat grilled tripe spot in Nampo-dong. Like with regular grilled offal, the beef heart cooks first, so start dipping that first.

A classic Busan boss trait: their tone sounds like they're angry, but when you actually watch them they're totally calm and friendly, haha. Busan dialect is hard, impossible to imitate.
Soju-and-beer mix (somaek) is really good here. Great atmosphere, great weather, great Busan dialect. Bupyeong Yang Gopchang, the grilled tripe spot in Nampo-dong — a Busan I'd want to visit every week.

They cut everything up so kindly. You just have to pick it up and eat it, so easy. A must-eat grilled tripe spot in Nampo-dong. The sight of the udon noodles sitting among the oil is wild.

Don't skip the udon noodles
We even added udon noodles — smart move, haha. The udon soaks up that oil and seasoning deliciously, and it's incredible.
If I come back, I'll probably order the seasoned version again instead of salt-grilled. Doesn't need any extra dipping sauce, the seasoning is perfectly balanced, and it just makes the soju disappear.

Even the tripe had a nice crunchy texture. It was all so, so delicious and felt really fresh — if I come back to Busan, I'm definitely coming back to this neighborhood.

Wrap-up
One medium platter, 3 bottles of soju, 1 beer, and 1 order of udon noodles — that was our night. The restroom inside is clean, and this is a place that works great on the street stalls when the weather's nice, or indoors too. Next time this season rolls around, I'll definitely head back to Busan for this place. Ate really well here.
