Seomyeon Milmyeon: Chewy Noodles and Generous Toppings
When the weather gets hot, I naturally start craving cool food.
This time, I visited Seomyeon Milmyeon to try milmyeon, one of Busan's signature dishes.
It has been loved in Seomyeon for a long time, and its chewy noodles and generous hand-shredded meat toppings really stood out.
The combination of cool mul milmyeon (cold wheat noodles in broth) and mild king dumplings was excellent, too.

It took about five minutes on foot, so it was easy to visit by public transportation.
It sits along the road, and the large white sign is easy to spot, so it was not difficult to find.
It has operated since 2009, which made it especially impressive as a long-standing milmyeon favorite in Seomyeon.

A Comfortable, Lively Dining Room
Inside, there were several tables set up.
There were many diners when we visited, and I could feel that this is a place Seomyeon has continued to love.
The restaurant had air conditioning and fans, so it was possible to eat comfortably even on a hot day.
The tables were not packed too tightly together, and the overall atmosphere felt relaxed.
Order your menu first at the kiosk by the entrance.
For cash payments, ask a staff member. Please note that Dongbaekjeon cannot be used.
Spoons, small plates, forks, and more were available at the self-service bar, so we could take what we needed.
Seomyeon Milmyeon Has Also Been Featured on TV
Information about the restaurant's television appearances was displayed on one side of the dining room.
It has reportedly appeared on several programs, including Kim Seok-hun's Oh! Look Here and MBN's Live Information Plaza.
Seomyeon Milmyeon begins cooking as soon as orders are placed and reportedly brings in fresh ingredients daily from nearby Bujeon Market.
I heard that the broth for a bowl of milmyeon is simmered for a full 72 hours, and you could feel the care that goes into it.
The toppings are also hand-shredded and reportedly served more generously than at typical milmyeon restaurants.

Ordering Two Mul Milmyeon and King Dumplings
Our group ordered two bowls of mul milmyeon and one plate of dumplings that day.
Before the mul milmyeon arrived, we were able to try warm broth first.
Starting with the savory, warm broth and then eating the cold milmyeon made the contrast in temperature fun, and it felt soothing, too.
Tangy pickled radish came as a basic side dish.
Its crisp texture made it nice to have between bites of milmyeon or dumplings.
Mul Milmyeon Topped Generously
When the mul milmyeon arrived, the toppings piled over the bowl were truly generous.
The bowl held plenty of noodles in cool broth with thin ice floating on top, covered with seasoning sauce, cucumber, radish, hand-shredded meat, boiled egg, and lots of sesame seeds.
It looked appetizing and refreshing at a glance.
Once I mixed in the seasoning evenly, the clear broth turned red and looked even more delicious.
The restaurant also provided instructions on how to enjoy milmyeon at its best.
The method was to add vinegar and mustard to taste, then mix the seasoning thoroughly and eat the noodles without cutting them with scissors.
The Texture of Noodles Eaten Without Cutting
The noodles I tried had a lively, springy chew.
Eating them as they were without cutting them with scissors let me fully enjoy milmyeon's distinctive resilience.
The seasoning was not overly spicy; it was just right.
It was not harsh enough to hurt my mouth, so I could enjoy the sweet-and-tangy flavor alongside a moderate kick of spice.
The cold, refreshing broth, chewy noodles, crisp cucumber and radish, and mild meat toppings came together for a full range of textures.
With the boiled egg as well, it was nutty and satisfying.
Chewy, Mild King Dumplings
The king dumplings we ordered with the milmyeon arrived warm in a steamer.
They were clearly large and long, so one plate was good for sharing with the group.
The dumpling wrappers were moist and chewy, while the filling was mild rather than strongly seasoned.
Having a bite of warm, mild king dumpling while eating the moderately spicy milmyeon made the flavors work together beautifully.
They were delicious on their own, but a light dip in the accompanying dumpling soy sauce added more savory depth.
Cool mul milmyeon and warm king dumplings really are a combination that is hard to go wrong with.
When You Crave Cool Milmyeon in Seomyeon
Seomyeon Milmyeon is easy to reach on foot from Seomyeon Station, and as a place that has been there for so long, it felt solidly grounded in the basics.
I was happily satisfied by the chewy noodles, moderately spicy seasoning, broth simmered with care for 72 hours, and generous hand-shredded meat toppings.

I also recommend ordering the chewy, mild king dumplings that pair so well with milmyeon.
