A wood-toned tonkatsu restaurant near Ilwon Station
I found a truly life-changing tonkatsu spot near Ilwon Station. If you are looking for premium aged tonkatsu with a crisp exterior and a juicy, moist center, Sioldon Ilwon Branch (시올돈 일원점), an aged-tonkatsu specialist that has been getting plenty of word-of-mouth buzz around Suseo and Ilwon, is worth noticing. I am such a fan of crisp breading and tender meat that I seek out countless great tonkatsu places. This visit to Sioldon Ilwon Branch won over my picky palate, and everything from the interior to the food and service was good.
It is an easy walk from the subway station, so visiting by public transportation is convenient. Blending into the neat, calm atmosphere of the nearby side streets, the storefront felt pleasantly relaxed; its modern yet warm wooden frame and white-toned exterior stood out even from afar.

Posters and signs around the entrance let you preview the signature dishes, leaving you with the happy problem of deciding what to eat before you even go in.

Open the door and you are welcomed by a cozy, warm wood-toned interior that feels separate from the outside world. A row of bar seats by the window makes solo dining comfortable, and you can relax while looking out through the large windows. Further inside, cushioned sofa seats and neatly arranged tables for two and four are generously spaced, making it easy to focus on a meal with your companions.

There are cute pandas too!

The dedicated aging cabinet in one corner is a symbolic space that shows Sioldon's real strength. Seeing fresh pork being cross-aged under pink lighting, at the ideal temperature and for the ideal amount of time, made my trust in the food shoot straight up.

The tray-return area and store notices were arranged neatly along the flow of the space, giving me the impression that hygiene and service were taken seriously. Aprons, hair ties, and mouthwash were available for easy use—and it was my first time seeing single-use mouthwash at a restaurant, which was so interesting!
The menu and how to enjoy Sioldon
The wall displays and menu show a varied lineup.

There is cheese katsu, loin katsu, tenderloin katsu, and even an assorted katsu set that lets you try both loin and tenderloin, so there are plenty of choices. Orders are placed at the kiosk.

The premium special loin cutlet particularly catches your eye: only four portions come from a single pork loin strip, so it is sold in limited quantities. It uses sangros, a special cut where loin, gabrisal (pork neck cap), and pork neck overlap; its rich fat layers and tenderness are said to give it a deeper, more intense flavor than regular loin.

Sioldon says it cooks its rice with high-grade Samgwang rice milled that same day!
While waiting for our food, I found the “How to Enjoy Sioldon” guide on the wall. Savoring each piece in the stated order lets you fully appreciate tonkatsu's charm.
- Start with the first piece without sauce, savoring the clean flavor of the meat itself and its crisp texture.
- Dip it in Himalayan pink salt to bring out the meat's savory depth.
- Add a little fresh wasabi or whole-grain mustard for a clean flavor.
- Mix plenty of mustard into the house-made tonkatsu sauce, then dip.
Assorted katsu, tenderloin katsu, and premium loin cutlet
The moment our main dishes arrived, neatly arranged on the table, I could not help but gasp at the visuals alone.

Cooking starts as soon as you order, so it takes about 15 minutes!

The tonkatsu sat appetizingly on a wire rack over a clean white plate, with the texture of the breading clearly visible.

The breading was not overly thick, yet its nutty crispness crumbled delicately in the mouth; the cut surface held plenty of moist, subtly pink juices that really got the saliva flowing. The round tenderloin cutlets were so tender that one bite almost made my head spin. There was absolutely no dryness—they were so moist they melted away like a soft mousse. With all those pooled juices, the meat's flavor spread richly with every chew.

Friend 1 ordered the tenderloin katsu! The cabbage salad came generously dressed with nutty, creamy black-sesame sauce, which was refreshing whenever the richness started to linger. Spicy, refreshing kimchi, danmuji (yellow pickled radish), hot and savory soup, and fluffy rice were all neatly set out on an individual tray, making it a hearty meal. It would be even better with a fizzy drink or a side of your choice.

I also tried the premium loin cutlet Friend 2 ordered, and it was definitely different! Now I see why it is limited~

Friend 3's loin katsu set meal had crisp breading and tender loin inside, and my friend liked it so much they said we should come back!

You get one canned drink for doing the receipt review event, so it seems worth joining! Need the Wi-Fi password?!

Final thoughts: This tonkatsu is seriously solid!
Sioldon Ilwon Branch showed tonkatsu where three elements come together: good-quality pork, a careful cross-aging process, and the frying skill that turns it into a finished dish. I was very satisfied to enjoy high-quality aged tonkatsu with kind service in a quiet, cozy, clean setting. I would recommend it if you want the true pleasure of crispy outside and moist inside, or a dependable date meal. Ingredients can sell out and the restaurant may close early, so it is best to head over a little earlier if you have your eye on the premium loin cutlet.
