Inside Sanseong Meat Shop: hall seating and private rooms

Walking in, the first thing that caught my eye was the Catch Table kiosk — a familiar sight at popular restaurants these days, haha.

We visited for lunch that day. The store was mainly made up of 4-person tables, and the hall was much more spacious than I expected.

There were also various private rooms toward the back. The spacing between tables was generous, and everything from the interior to overall cleanliness was well maintained.

Sanseong Meat Shop sells both Korean beef and pork. We ordered the Pork Set A for ₩54,000. Set A consists of 200g yeast-aged pork neck + 200g pork belly + 100g of today's special cut, 500g total. The special cut that day was gabrisal (pork skirt meat).

What side dishes come with the meal?

Since we had reserved ahead, the basic side dishes were already set on the table when we arrived. A whole spread of various sauces and vegetables to pair with the meat was laid out, and it was fun to taste them one by one.

The acorn jelly had a soft texture with a tangy edge that whetted the appetite, and

the truffle scallion mayo had a subtle truffle aroma with a creamy, savory flavor.

Personal plate with yeast salt and black seaweed salt

On the personal plate, yeast salt and black seaweed salt were also prepared to eat with the meat.

Next, beef radish soup came out as a side dish. The broth was spicy yet refreshing, making it a good way to warm up the stomach before digging into the meat properly.

After a short wait, our Pork Set A arrived. Even in photos, doesn't the meat look absolutely amazing?

Sanseong Meat Shop is also well known for its grilling service, where staff cook the meat for you.

The staff explained the sauces that pair with each cut while grilling the meat for us, so we were able to relax and enjoy the meal.

Yeast-aged pork neck

First, they grilled the yeast-aged pork neck. The well-cooked portion was set aside ready to eat, and the rest was placed on a small charcoal brazier beside us. Thanks to that, the meat stayed warm throughout the meal, which I really liked.

The staff recommended eating the pork neck with yeast salt and black seaweed salt. Dipping it lightly in the salt and taking a bite, the meat was surprisingly tender despite its thickness, with juicy flavor held inside. The pork neck's distinct clean flavor came through well, making for a delicious first cut.

Pork belly with truffle scallion mayo and herring roe

Next was the pork belly. They recommended pairing it with truffle scallion mayo and herring roe. Trying it with the truffle scallion mayo first, the belly's rich fattiness combined beautifully with the creamy, savory sauce.

Adding the herring roe on top brought a popping texture and salty flavor that harmonized nicely with the belly's savory fattiness. The meat is delicious on its own, but mixing and matching the various sauces added even more fun.

Special cut of the day: gabrisal

Next, we tried the gabrisal, that day's special cut.

Grilled gabrisal, the day's special cut

They recommended pairing the gabrisal with wasabi and shiitake wasabi. After fully enjoying the meat's flavor, a touch of wasabi added a sharp kick that cleaned up the palate nicely.

I tried several combinations, but personally, pairing the meat with the yeast pickled chili paste was my favorite. The pickle's distinct umami went so well with the meat's savory flavor that I kept reaching for more.

The egg roll made right on the grill

After finishing grilling the meat, the staff then made us an egg roll. They rolled the egg into multiple layers right on the grill plate, and the finished result looked thick and fluffy, almost like castella cake.

Doesn't it look amazing? Haha. Taking a bite, it was just as soft as it looked. It was delicious on its own, but also went well with the rice that came out afterward or with the remaining meat.

Buckwheat hot pot rice (5,000 won) and bangaa doenjang stew (5,000 won)

For our rice dish, we ordered buckwheat hot pot rice and bangaa doenjang stew (soybean paste stew with bangaa herb). Roasted seaweed and soy sauce came with the buckwheat rice.

Opening the lid, the rice was cooked wonderfully fluffy. Even a plain spoonful before adding any side dishes tasted great. It was good with roasted seaweed and a dash of soy sauce, and even more satisfying paired with the grilled meat or the soft egg roll.

The bangaa doenjang stew had two large chunks of tofu in it. Taking a bite, the bangaa herb's fragrant aroma spread subtly, blending well with the stew's savory soybean paste flavor. Even after eating my fill of meat, the warm hot pot rice and stew made room for more, haha.

At the end, we finished off with nurungji (scorched rice) made by pouring water into the hot pot, ending the meal on a nice, nutty note.

Is Sanseong Meat Shop worth it for a family dinner?

With staff grilling the meat directly and explaining the right sauce for each cut, Sanseong Meat Shop made for an easy, relaxing meal.
