What kind of restaurant is Sanseong Meat Shop Dongnae Main Branch?
I went to Sanseong Meat Shop Dongnae Main Branch to try some slightly special pork in Dongnae. "Meat, wearing nuruk." Sanseong Meat Shop is a nuruk (traditional fermentation starter)-aged pork BBQ specialist that reworks Busan's traditional nuruk and pork in a new way.
The warm hanok atmosphere blended with the tidy feel of a butcher shop gave a calm, upscale impression right from the entrance. I wanted to recommend this to anyone looking for a Dongnae restaurant that adds a distinctly Busan story to familiar pork.

Where the name Sanseong Meat Shop comes from
The name Sanseong Meat Shop combines "Sanseong" from Dongnae Mountain Fortress (동래산성) with "meat shop." I also found it striking that the name carries on from a butcher shop the owner's parents ran at the slaughterhouse under Busan Buk-gu Office.
After selecting good-quality pork, they combine wet and dry aging processes and coat it in Busan's traditional nuruk in their own way. With detailed cuts by part and butchering method, plus nuruk-based salt and side dishes, it's a space that brings Busan's ingredients and character together on one table.
A hanok and butcher-shop interior, with private rooms

Sanseong Meat Shop Dongnae Main Branch has a hanok feel near Dongnae Station. "What would a butcher shop built as a hanok look like?" The warmth of wood and tiled roof harmonizes with the tidy feel of steel and glass.

Rather than just leaning on an old-fashioned mood, the space also incorporates clean, refined touches, finishing as a place that's comfortable to linger in quietly.

Along with regular seating, there are also private rooms, making this a Dongnae restaurant worth considering for family dinners or gatherings.

What we ordered at Sanseong Meat Shop and what it cost
Today's order was nuruk pork neck 130g for 14,000 won, pork belly 130g for 14,000 won × 2 servings, and Pepsi Zero for 3,000 won.

The nuruk pork neck is Sanseong Meat Shop's signature dish, fermented and aged using dried steamed-rice nuruk from Geumjeongsanseong Village. The pork belly is a cross-aged menu item unique to Sanseong Meat Shop, cut to keep an LA-galbi-like bone shape.
The banchan spread and beef radish soup
I visited after making a reservation. Several kinds of basic side dishes and sauces were neatly arranged, making the table feel even more generous.
There were plenty of vegetables and sauces to pair with the meat, so it was fun trying a different combination with each bite. The plates and tableware were also neatly prepared, giving a comfortable impression even before the meal started.
The beef radish soup had big chunks of radish and beef, and its warm, clean broth settled the palate nicely.

There was plenty to taste bite by bite while waiting for the meat to cook, so the basic spread felt satisfying on its own.
Grilling service: staff cook the pork for you
Sanseong Meat Shop's nuruk pork neck, cut into an easy-to-eat thickness, and the pork belly with its unique cut resembling LA-galbi bones, cross-aged.

Grilling is about connecting with the guest
That's the story Sanseong Meat Shop carries.

A staff member grills the meat directly, naturally explaining the characteristics of each cut and the best way to enjoy it.

Watching the meat slowly cook on the grill while chatting felt like part of the meal itself.

With staff explaining the grilling and eating methods directly, I could comfortably wait for the meat to cook just right.
Eggs grilled right on the pan, plus a full spread with egg, nuruk pork neck, pork belly, and vegetables together.

How the LA-galbi-shaped cross-aged pork belly tastes
The pork belly we ordered stood out with its unique cut resembling LA-galbi bones. Cross-aged through both wet and dry processes, it gave off a subtle, savory aroma as it cooked on the grill.

The staff grilled it carefully into easy-to-eat pieces, so we could comfortably enjoy the browned exterior and moist interior. Eaten plain, the belly's savoriness came through nicely, and paired with the accompanying salt and side dishes, it took on a different kind of harmony.
Nuruk pork neck and the egg cooked on the grill
The nuruk pork neck was browned on the outside while staying moist inside, letting me calmly enjoy the neck's distinctive clean flavor. Browned outside and moist inside, it paired well with the various side dishes.
The egg, slowly cooked at the edge of the grill, was soft and savory, pairing well between bites of meat. I had it alongside a Pepsi Zero.
Is Sanseong Meat Shop Dongnae Main Branch worth a visit?
It was an evening where the warmth of a hanok, the tidiness of a butcher shop, and pork coated in Busan's traditional nuruk came together smoothly.
- ✔️ A place to experience nuruk-aged pork
- ✔️ A comfortable meal thanks to staff grilling for you
- ✔️ A space suited to family dinners and small gatherings
- ✔️ A location easy to reach on foot from Dongnae Station
- ✔️ A menu built around Busan's ingredients and story
Rather than dressing things up flashily, this is a place that quietly shows off a Busan flavor in its own way. If you're looking for tidy, aged pork BBQ in Dongnae, this is a Dongnae restaurant worth visiting slowly. "Meat, wearing nuruk." I hope it stays a good, bustling Busan spot for a long time.
