Not long ago, after my kid's swim class ended, we were hungry and looking for something clean and easy on the stomach.

A Hommaesil dinner spot found after kid's swim class

I suddenly remembered a hot pot restaurant tucked into the corner of the first floor of a nearby movie theater building, so we quietly headed over as a family.

Dragging our tired bodies there after all that exercise, we ended up with a warm, rich soup that exceeded expectations and left us feeling full in more ways than one.

Three side dishes in brass bowls, with kimchi-jjim as the standout

At Ok Doenjang Suwon Hommaesil Branch, the side dishes came out as a set of three in brass bowls. We didn't wait long after ordering before these neat side dishes arrived, beautifully arranged in heavy, pretty brass bowls.

The stir-fried odeng (fish cake), light but with a satisfying crunch, and the palate-cleansing gat kimchi (mustard leaf kimchi) really stood out.

The free kimchi-jjim in particular had tender, slow-braised pork inside, which made it even better.

The deep, careful flavor of these side dishes alone almost had me finishing a whole bowl of rice before the hot pot even started boiling.

Suyuk jeongol: rich broth with minari (water dropwort) and beef knee cartilage

The sujuk jeongol at Ok Doenjang Suwon Hommaesil Branch is cooked right at the table on an induction burner. Soon, the highlight of the meal — the pork hot pot — arrived and went straight onto the induction stove.

With vivid green minari (water dropwort), neatly sliced boiled pork fanned out, chewy doganitang cartilage, and pale white ear mushrooms, the whole spread looked like a work of art.

Taking a spoonful of the bubbling, rich broth warmed me up from the inside, with a deep, clean flavor that spread across the tongue.

The meat had no gamey smell at all and pulled apart tender along the grain, so even my hungry, post-swim kid gobbled it right up.

Wrapping a piece of the pork or brisket in fragrant minari with a bit of kimchi-jjim makes for a light, healthy protein-packed bite.
