In a large aging chamber tucked in the corner of the store, they age the Jeju pork for 72 hours using their own method. Knowing I could taste Jeju specialty cuts aged for a full 72 hours got me curious about the flavor the moment I walked in!

After sitting down at a table near the front and putting on the apron provided, I was fully ready to eat. I noticed the chairs had a spot to store bags, so no worry about the meat smell soaking into them. Soon after, the side dishes arrived — full of both sauces and handmade banchan, which really got me in the mood to eat meat!

I loved having so many condiments to pair with the meat — the hairtail fish sauce came with perilla powder and cheongyang chili, which totally hit the spot for my taste!

I especially loved how tasty the side dishes were — this cool water kimchi had just the right tangy-refreshing balance, so it never got tiring while eating meat.

This scallion salad in particular was really delicious — I personally prefer a simply seasoned scallion salad over one drowned in gochujang sauce, and this one kept the scallion's flavor while staying lightly seasoned, which made it so, so good haha.
I can't leave out the cheonggukjang among Dokbul Janggun's side dishes — a bowl of this savory fermented soybean stew is served free of charge! I even added rice and finished a whole bowl with just this one dish! (Rice: ₩1,000)
It was a proper cheonggukjang loaded with beans and aged kimchi. It was great that a stew like this comes as a default side dish, so you don't need to order an extra jjigae for your meal. Once the charcoal came out too, I was fully set up with a hearty spread of side dishes 😋😋

With the side dishes plus the Dokbul Janggun aged combo, the table quickly filled up. Can you see that bright red flesh? Dokbul Janggun's combo set comes with 200g of kkodeulsal (neck cut), 200g of bolhangjeong (a combo of jowl and cheek meat), and 200g of nakyeopsal (the cut between the neck and back) — a best-seller that's cheaper than ordering each cut separately.

The meat quality was great, and being able to compare textures across the different cuts side by side was a nice touch 😆😆

I put a moderate portion of each cut on the grill — the savory smell was intense 🫠🫠 The nakyeopsal, which tastes like pork neck meat, was so tender that even in a thick cut it had no chewy resistance and was delicious.

This kkodeulsal, from the neck area, had both fatty and lean parts that were literally chewy in the best way — delicious. Adding the pickled chili and hairtail fish sauce side dishes made the flavor even better. In between bites of the well-aged Jeju specialty cuts, a bite of the owner's homemade water kimchi reset my palate every time haha.

By the time the meat was cooked through, the grilled kimchi side dish was also perfectly done — an amazing pairing with the meat 🥰🥰

The lettuce wraps were fresh too, and topping the meat with scallion salad added a spicy kick that made it even more delicious! (Extra lettuce wraps: ₩3,000)

Of the three specialty cuts, my husband enjoyed this kkodeulsal the most. It had good texture and paired well with several of the side dishes — very satisfying.

This is the bolhangjeong, which I personally enjoyed the most — the crisp bite unique to pork jowl combined with the chewy fat gave it a great texture and a really savory flavor! I decided that on my next visit I have to add extra bolhangjeong. Ordering the Dokbul 72 Jeju Combo lets you sample a variety of cuts one by one, and then you can add more of whichever you liked best — so I'd really recommend ordering the combo to try a range of flavors. 😁😁
Mul-bibim naengmyeon (cold noodles), 9,000 won
The mul-bibim naengmyeon at Dokbul Janggun Ilsan Baekseok Branch is ₩9,000. Turns out they serve their cold noodles as a hybrid of mul-naengmyeon (cold noodle soup) and bibim-naengmyeon (spicy mixed cold noodles)?

A tangy broth comes with egg, pickled radish, and yeolmu (young radish greens), plus a seasoning packet — mix it all together gently and you get a delicious mul-bibim naengmyeon!

It's both a water-based and a mixed noodle dish at once, and the flavor was half-and-half too, which was fascinating haha. The noodles looked like kudzu naengmyeon in color but had the texture of Hamhung-style naengmyeon — and since I prefer Hamhung-style, this side dish was right up my alley. Slurping down these tasty noodles and finishing off the last bits of meat... in the end, I cleared every single side dish too haha.
