I couldn't help but wonder how serious they must be about meat to call themselves a 'lab,' and my expectations shot through the roof!

Turns out Dokbul Janggun Ilsan Baekseok Branch is a serious specialist that only carries the very best — top-grade Jeju kkodeulsal. Did you know kkodeulsal only makes up about 10% of a whole pig, making it a genuinely rare and precious specialty cut?! The fact that a place in Ilsan lets you enjoy this premium, hard-to-find cut to your heart's content at such a fair price feels like a blessing for local residents! 💖
I didn't get to take a summer vacation this year, but I felt like I was in Jeju right here in Ilsan, haha.

The meat itself is excellent, but honestly, what really won me over were these side dishes! There's a reason it says 'we keep researching how to make it even tastier when paired with kkodeulsal.' As the matching side dishes got laid out one by one on the round metal table, my anticipation just kept building.


Starting with the grilling kimchi that maximizes the meat's flavor with an explosion of umami, the roasted glasswort salt that brings out even more savoriness, the tangy and refreshing house-made dongchimi that cuts through any greasiness, and the deeply nutty cheonggukjang — pairing each one with the meat means you never get tired of it for even a single second!! Dip it lightly in salt to taste the meat on its own, then load it up with chili and wasabi and take a big bite — honestly heaven... pure bliss ✨

When the meat I ordered finally arrived — wow! I let out a little scream the moment I saw it, eek! The plate had red meat and pale white fat layered together in a perfect, dense ratio, and it practically screamed 'I am freshness itself' just by looking at it! Plus, compared to other BBQ places at similar prices, the portion here is genuinely huge.
The second the meat hit the grill with a sizzle, that savory meat aroma hit my nose and I nearly got dizzy from it, ugh 😭 The fat on kkodeulsal is totally different from regular fat — it's got that chewy, nutty quality!! I really love this cut. Even while it's grilling, that nutty smell is on another level, seriously!
And then there's the juice that bursts out as the meat browns up nicely ~~~~ that unmistakable chew and rich meaty aroma that you'd never get from pork belly or pork shoulder just fills your whole mouth... wow, this is insane!!
