The broth and boiled meat made fresh every dawn were really delicious, along with the house-made kkakdugi (cubed radish kimchi), barley ssamjang, and dadaegi (chili paste condiment). The barley ssamjang was really good... a king combo with the cucumber peppers.

Also, one thing I always pay attention to with sundaeguk is any gamey smell, and I didn't detect any at all. No meaty funk whatsoever — just a clean, rich broth that went perfectly when mixed with rice. It really felt like a proper Gansuk-dong soup restaurant.

And the dish that stuck with me most that day. It was the suyuk. Honestly, I ordered it expecting a fairly typical texture, but I was a little surprised the moment I tried it. The suyuk was soft and springy, incredibly tender.

That said, it wasn't mushy at all — the meat was very tender to chew and just gently gave way in my mouth. It was a slightly different texture from any suyuk I'd had before.

The banchan matters a lot when eating soup, right? Here it comes with kimchi and dried radish strips together, and they went really well with the sundaeguk. The signature chewy texture of the radish strips kept me reaching for more.

Personally, the sundaeguk was delicious that day, but if I come back again I'd want to order the suyuk again too.
