Byway Bakers Cheongsa Main Branch bakery

At Byway Bakers, famous in Uijeongbu for its financiers, I tried three baked goods: Wakkppu salt bread, Dubai chocolate salt bread, and a pistachio financier. Wakkppu salt bread has been such a nationwide hit that I was curious, and as luck would have it, the new fig Basque cheesecake flavor had come out on the day I visited.

Byway Bakers is located across from the Gyeonggi Provincial Government Northern Office plaza, so it seemed like an easy place to pop into after running an errand. There are bus stops nearby as well as a light-rail station, so it is very accessible by public transportation. I visited by car on a Sunday, and customers get one free hour in the building's underground parking lot, so keep that in mind if you are driving.

Just how crispy is the fig Basque cheesecake Wakkppu salt bread?

I had touched the soft version before, but this was my first Wakkppu, so I was looking forward not only to the flavor but also to the satisfying feel of breaking it.

Since it is a salt bread coated in white chocolate, it can break easily. But Byway Bakers wraps it in a thick mesh sleeve to keep the coating intact, so I could escort it home safely.

From the side, the white chocolate coating looked almost as thick as ten layers of wax. Seeing that generous coating had me so excited about how satisfying it would be to crack 🫪

I used a fork to crack the chocolate, and it really shattered with that crisp Wakkppu feel, which was so charming. By my standards, it was a perfect-score Wakkppu: it is not just a one-off novelty, because the finish is getting to eat a delicious dessert, and I loved that.

Sweet white chocolate and refreshing cream first wrapped around my mouth, and I also loved the soft top of the salt bread, made moist like génoise by the cream. The bottom still had the layered texture of salt bread itself. A whole fresh fig was tucked into its little cave, bringing gentle sweetness and those popping fig textures. Tangy-sweet fig and light Basque cheesecake are a foolproof pairing, so if you are looking for a delicious, special fig dessert for fall, go to Byway Bakers.

The halved salt bread was packed with strawberry and pistachio spread. It was not artificially sweet, and the natural nuttiness of the pistachio came through beautifully.

I have been hooked on Byway Bakers financiers lately and even order them for delivery, but when I went in person I found a pistachio flavor. The top was coated in pistachio-colored chocolate, so I worried it might be too sweet; surprisingly, the nuttiness was strong, while the sweetness lingered softly at the end.

Another reason Byway Bakers is famous for financiers in Uijeongbu is their extra-crisp exterior. Of course, that crunch may be a matter of taste, but personally, I found Byway Bakers' uniquely crisp, golden-baked outside absolutely delicious. The inside batter, though, is moist in contrast to that crackly surface, which gives these financiers such an appealing twist.
