A Hapjeong shabu-shabu spot where you pick your own meat, broth, and even your finishing dish — Shabu in Seoul Hapjeong Branch.
I was looking for somewhere clean and pleasant to eat in Hapjeong and ended up at Shabu in Seoul Hapjeong Branch '◡'

The place felt clean from the moment I walked in, and I liked that you could choose your own meat and broth, plus dig into a hearty spread of 11 vegetables, mushrooms, glass noodles, and fen tiao (bunmoja) all at once! What I found most fun, though, was that the finishing dish changes depending on which broth you pick ෆ
Where is Shabu in Seoul Hapjeong Branch, and what are the hours?

What is the dining room like inside?
My first impression walking into Shabu in Seoul Hapjeong Branch was just how clean everything felt overall! It's a bit calmer and more put-together than your typical shabu-shabu place, so it'd work well for a Hapjeong date or even a family meal with your parents :)

The atmosphere was good enough that I could take my time and eat slowly.

Choosing the meat and broth: black pork neck, prime Angus chuck flat, clear mushroom
At Shabu in Seoul you get to pick your own meat and broth for the shabu-shabu 🙌 I went with two meats — 1st-grade black pork neck and prime Angus eye of chuck flat ෆ Choosing two different cuts meant I could alternate between them, which was really nice :)

I could choose the broth too, and I picked the clear mushroom broth! I dipped the meat and vegetables in one at a time in that clean broth 💛
The vegetable tray: 11 vegetables, glass noodles and fen tiao
Vegetables matter just as much as the meat in shabu-shabu, right haha. This place had a total of 11 vegetables prepared, along with a mix of mushrooms. On top of that there were glass noodles and fen tiao (bunmoja) too ⭐️

The spread was more varied than I expected, and once it was all laid out on the plate it looked really generous. Dipping meat and vegetables one by one into the broth, then mixing in the glass noodles and fen tiao along the way, meant I got to enjoy a lot of variety even though it was technically one dish :)

How the black pork neck and prime Angus chuck flat cooked up
I started with the black pork neck I'd picked, cooking it briefly in the broth and eating it with vegetables — and then it was time for the prime Angus eye of chuck flat too!

Alternating between the two cuts made eating so much more fun than if I'd only picked one kind 🙌

Soy sauce, chili sauce, and sesame sauce were all set out to go with the meat. Each one gave a slightly different flavor, so there was fun in picking whichever suited my taste at the moment :)

The combo with the clear mushroom broth was delicious too, so I enjoyed it all the way through :)

One of the great things about shabu-shabu is that it's not just about the meat — you get to load up on vegetables too ෆ

Adding wild garlic leaf (myeongi-namul) to wrap the meat
I also ordered wild garlic leaf (myeongi-namul) as an add-on at Shabu in Seoul Hapjeong Branch! Wrapping it around the meat turned out to be genuinely delicious. Putting the shabu-shabu meat on the wild garlic leaf and eating it in one bite paired so well together — it felt like a completely different experience from eating the meat on its own ෆ

If you like wild garlic leaf, I'd definitely recommend pairing it with the meat :)
Which finishing dish comes with each broth?
Here's the part I found most fun about Shabu in Seoul — the final finishing dish changes depending on the broth you picked.
- Clear mushroom → egg porridge
- Spicy mushroom → rosé risotto
- Sukiyaki → yakisoba
- Blue crab doenjang → doenjang rice roll
- Beef tomato → tomato risotto
So each broth comes with its own matching finishing dish. I'd picked the clear mushroom broth, which meant egg porridge! You just can't skip the porridge at the end of a shabu-shabu meal, right haha.
Being able to finish off the leftover broth from the meat and vegetables with egg porridge was great, so it might be worth thinking about which finishing dish you want when you're choosing your broth in the first place :) Next time I'd like to try a different broth and see what other finishing dish comes with it haha.
