Suwon malatang restaurant with pick-your-own ingredients: Rahongbang

In short

Rahongbang Malatang Suwon Cheoncheon Branch is a malatang restaurant in Cheoncheon-dong, Suwon, Gyeonggi. I filled a bowl with rice noodles, glass noodles, and vegetables and chose level 1.5 heat, between Shin Ramyun and Buldak. A satisfying pick for days when you want exactly the ingredients you like.

Rahongbang Malatang, a Cheoncheon-dong favorite, is in Sehwa Plaza across from Lotte Mart. It is close to Hwaseo Station, about a three-minute drive from Dongnam Health University, and under 10 minutes from Starfield.

Parking is available in the building, though parking fees are not supported. You can park along the road on weekdays from 11 AM to 2 PM, so keep that in mind.

A tidy dining room and open kitchen

The dining room is clean and neatly arranged, making it an easy place for everyone from students to families to visit. There are sofa tables, two-person tables, and four-person tables, and even when I came late in the evening, customers kept coming in. Its delivery rating is also 4.9, which raised my expectations even more.

The kitchen is open, so you can see clearly inside. Even though they work with high heat, I could see that both the floor and hood were kept clean, which made me trust the food even more.

Solo-dining dishes and spice-level choices

There are individual portions of guobaorou (sweet-and-sour fried pork) and lemon cream shrimp, so solo diners can order a few things without feeling burdened. The menu is packed with universally appealing Chinese-style dishes: guobaorou, shrimp egg fried rice, and lemon cream shrimp.

The spice levels are divided quite specifically, and today I chose level 1.5, a heat level between Shin Ramyun and Buldak. In conclusion, it suited my taste perfectly.

For payment, you use the kiosk. Put your bowl on the scale and the price is shown depending on whether you chose malatang or mala xiang guo. I thought the self-checkout system for malatang was pretty neat.

A wide range of fresh ingredients, sold by weight

So many fresh ingredients. Just seeing all those colorful choices made me happy already! With this many ingredients, proper management is reaaally important, and everything from vegetables and tofu to noodles and fish balls was prepared so neatly that I could tell it was well looked after!

Wide selection of malatang ingredients

What surprised me even more was the variety. When you visit late, the ingredient bins usually are not this fully stocked, but every single kind was filled right up.

The plentiful mung bean sprouts, napa cabbage, and Chinese glass noodles were placed at the bottom, with tofu, vegetables, meat, and noodles besides. They even had the trendy panda-shaped bunmoja (thick starch noodle cakes).

At other malatang places, meat and skewers are always charged per piece, right? The reason Rahongbang Malatang is such good value is that everything is priced only by weight. Skewers can add up fast elsewhere, but here you can take as much as you want and still keep the price low.

Malatang ingredient display station

The self-service station has tableware, Chinese vinegar, danmuji (pickled yellow radish), peanut sauce, and hair ties. If you love dipping things in peanut sauce, you can take as much as you like.

Malatang filled with my favorite ingredients

Anyway, I polished off a bowl filled to the brim with my favorite things, including rice noodles and glass noodles! Honestly, isn’t malatang all about picking out only the things you love? 🧡

A bowl of malatang filled to taste

My malatang arrived less than five minutes after ordering. We had loaded it generously for two people, and I was thinking, “When are we going to finish this?” Then I tasted the broth first, and the savory depth of richly simmered beef bone broth gave it such a solid foundation.

Broth-filled malatang with generous ingredients

Sichuan pepper and chili oil came together brightly for a pleasant tingling heat that lingered in my mouth. The vegetables still had their crunch, while the Chinese glass noodles and bunmoja stayed bouncy and chewy rather than going soggy. It was so delicious I could have called it the best malatang of my life.

Rahongbang Malatang Suwon Cheoncheon Branch has clean, varied ingredients and great value thanks to its weight-based pricing. I need to come back regularly to boost the mala level in my bloodstream ❤️

The fun of choosing ingredients to suit yourself

It was nice that we could each choose every ingredient we wanted and enjoy it our own way. I kept mine light with mostly mung bean sprouts, meat, and cabbage.

Even though it was the same malatang, choosing different ingredients made it feel completely different, which was so interesting. This is the kind of place where you can fill your bowl exactly to your taste.

Malatang with meat and wood ear mushrooms

I picked up a thick piece of meat and some wood ear mushrooms! The meat was not thin at all—it had a satisfying bite. Wood ear mushrooms have that crisp, crunchy texture, so they feel like a must-have in malatang 🤍

Just mix it up well like this and dig in! Up close, you can see how packed it is with ingredients. When I lifted them with my chopsticks, they were lightly soaked in broth and looked even more appetizing. One bite in, that tingly, deep mala aroma came rushing through—so good.

A chopstickful of broth-soaked malatang ingredients

Can you see the wide glass noodles stretching out like this? Haha. Slurping them with mung bean sprouts was seriously delicious because they had soaked up the broth. It was fun getting noodles and ingredients all together in one chopstickful.

Choosing ingredients was fun, and the flavor was satisfyingly tingly and deep. It was packed with wood ear mushrooms, mung bean sprouts, beef, shrimp, and tofu. Just looking at that broth color, it looks nicely spicy, right? If you are looking for somewhere to go when a malatang craving hits, take note! Since you build your own bowl, it is truly perfect for eating exactly to your taste ❤️

⭐️ Cleared it nice and clean again today ⭐️
