Gansuk-dong tripe hot pot with Korean beef and udon: Gukdam, Incheon
In short
Gukdam Sundaeguk Main Branch is a sundaeguk (blood sausage soup) and tripe hot pot restaurant near Gansuk-ogeori Station in Gansuk-dong, Namdong-gu, Incheon. Sharing the Korean beef tripe hot pot with a friend, the writer also ordered sundaeguk, a plate of sundae (blood sausage) and udon noodles, and the spicy, nutty hot pot broth deepened the longer it simmered. It was the best tripe hot pot the writer has had so far.

Looking for a good tripe hot pot spot in Gansuk-dong, I visited Gukdam Sundaeguk Main Branch with a friend.

That day we centered the meal around the Korean beef tripe hot pot, but also ordered sundaeguk, sundae, and udon noodles on the side.

The tripe hot pot in particular hit the spot so well that I'd say it was the best I've ever had.
Where is Gukdam Sundaeguk Main Branch, and what are its hours?
Gukdam Sundaeguk Main Branch is located at 8 Namdong-daero 897beon-gil, 1F Unit 101, Namdong-gu, Incheon.
It's a fairly short walk from Gansuk-ogeori Station, so it wasn't hard to find.

They're open Monday to Saturday from 10 AM to 10 PM, closed on Sundays.

Walking in, it had the cozy feel typical of a soup restaurant, but everything was neatly arranged overall, which made it nice for a slow meal with a friend.
How does the Korean beef tripe hot pot broth taste?
The Korean beef tripe hot pot was what I was most looking forward to that day at Gukdam Sundaeguk Main Branch.

As it started bubbling, the tripe and vegetables mingled together and the broth grew richer and richer — the smell alone was promising. Tasting the broth first, it was deeply spicy yet savory, not just aggressively hot, and it was the kind of flavor that kept pulling my spoon back in.
The tripe had a rich, savory flavor that came alive the more you chewed it, and it paired really well with the broth. I told my friend right away that this was the best tripe hot pot I'd ever had.

What I loved most was how the broth kept deepening in flavor the longer it simmered. Alternating between fishing out tripe and taking spoonfuls of broth, the pot emptied out before I knew it.
Finishing the tripe hot pot with udon noodles
After eating a good amount of the tripe and vegetables, we added the udon noodles.
A hot pot really doesn't feel complete until you've had the noodles at the end, right? With the broth already infused with all that savory tripe flavor, adding the udon noodles made everything taste even richer.
The chewy noodles soaked up the spicy broth beautifully, perfect for slurping, and my friend and I kept reaching for more chopsticks-full all the way to the bottom of the pot.

I usually pay close attention to broth flavor when eating hot pot, and that day, even while chatting with my friend, I kept going back for more.
The Korean beef tripe hot pot alone was satisfying, but adding the udon noodles made the meal so much more filling.
The sundaeguk ordered alongside the tripe hot pot
We also ordered sundaeguk to go with the hot pot. Served piping hot in a stone bowl, the sundaeguk broth was clean yet deep, offering a different appeal from the hot pot.

I tasted the broth on its own first, then seasoned it to my taste, which made it easy to finish the whole bowl comfortably.

If the hot pot was spicy and intense, the sundaeguk felt more like a hearty, filling comfort — ordering both together was a great call.

Sharing a variety of dishes with a friend made the meal feel so much more abundant than sticking to just one menu item.
Sundae served warm at Gukdam
We also had the sundae (blood sausage), and I loved its chewy texture and savory flavor.

What stood out about Gukdam Sundaeguk Main Branch is that they serve the sundae warm. It was great to pick at while the hot pot simmered, and it also paired well with the sundaeguk.
A little salted shrimp or salt on the side brought out the sundae's clean flavor even more, so I kept reaching for it. From the Korean beef tripe hot pot to the sundaeguk, sundae, and udon noodles, all the dishes came together naturally.

Verdict after sharing the hot pot with a friend
Out of everything at Gukdam Sundaeguk Main Branch, our Gansuk-dong tripe hot pot outing with a friend, the flavor of the Korean beef tripe hot pot stuck with me the most.

I love tripe hot pot and have tried it at plenty of places, but to my taste, this was the best one yet.

Rich, spicy broth, savory tripe, and finishing it off with udon noodles made for a truly filling meal. Sharing the sundaeguk and sundae on top of that made the whole meal even more satisfying.
