If you love sushi in Ilsan, today's post might be a little dangerous — scrolling through these photos might suddenly make you crave sushi. While mulling over dinner near Ilsan Lake Park, I ended up at Hwangje Sushi Ilsan Main Branch! The name alone already sounds like it's not your average sushi spot, right? That day I ordered the Special Sushi 12P and Today's Sushi 10P. Bottom line up front: this isn't the place for cheap fill-your-belly sushi — it's better suited for days when you want properly aged, generously sized neta and a variety of fish.

Hwangje Sushi Ilsan Main Branch sits across from Ilsan Lake Park, between Jeongbalsan Station and Madu Station. It's also reasonably accessible from Western Dome, Ilsan MBC, Ilsandong-gu Office, and Lotte Department Store Ilsan, making it a good spot for a date in Ilsan, a family dinner, or a meal after a get-together.

I visited at night, and the big 'Hwangje Sushi' sign caught my eye from far away. There were even sushi photos at the entrance, so I was already getting hungrier before I even walked in — the magic starts early, haha.

Walking into Hwangje Sushi Ilsan Main Branch, the overall look was clean, combining white and wood tones. The tables weren't cramped and everything felt tidy, giving off that calm sushi-restaurant atmosphere.

Along with tables for groups, there are also counter seats good for solo dining or a solo drink. It looked like a place that could accommodate anything from family meals to dates to company dinners, depending on group size. I also liked being able to watch sushi being prepared to order at the open kitchen.

This time I focused on the sushi, but looking around the store, they also had Ebisu and Sapporo Premium draft beer ready. A bite of aged sashimi with a cold sip of draft beer... that's already a reason to come back.

They also had a variety of drinks including sake, so it seemed like a good spot for a solo drink or a date night in Ilsan.

There's also a wide range of Japanese-style dishes — raw fish rice bowl, sake-don, eel rice bowl, kaisen-don, futomaki — and they say they feature seasonal ingredients like winter yellowtail depending on the time of year, so there's fun in coming back each season. That's exactly why it works whether you want a quick solo sushi meal or a family outing, date, or group dinner.

Pickled scallions and ginger, as much as you like

The table comes with rakkyo (pickled shallots) and pickled ginger, a perfect match for sushi. Eating a piece of sushi, cleansing your palate with the ginger, then moving on to the next piece lets you enjoy each fish's flavor more clearly.

As someone who loves rakkyo, I very much welcome this generous serving. I'm the type who reaches for the rakkyo tongs before the sushi even arrives. Also, you can get a hefty shrimp tempura by participating in a Naver photo review — I'd recommend trying that too.

There's a self-serve bar on one side of the store. You can easily grab the dishware and sauces you need, and it was well organized overall. Since a sushi restaurant handles raw fish, I naturally pay close attention to cleanliness, and it was impressive how tidy both the store and the tables were kept at Hwangje Sushi.

The dishes served while waiting for the main sushi also stuck with me. As pictured, the seasonal porridge was savory and appetite-whetting, and the sides that came with it were easy to enjoy before diving into the sushi.

The grilled salmon dish was also great — crisp outside, moist inside! My chopsticks didn't stop moving even before the main sushi arrived.

The sushi arrives neatly arranged on a wooden plate, so the visuals alone are impressive. Perfect for anyone who'd rather sample a bit of everything than stick to one type of fish.

What stood out most about Hwangje Sushi was how substantial the neta on top of the rice was. Instead of thin, small slices that leave you mostly tasting rice, the generously sized neta let me really feel the fish's texture and flavor with every bite.

Which fish top the Special Sushi 12P?

And here's the Special Sushi 12P I was especially looking forward to that day. Just looking at it, the lineup is varied, right? From glossy salmon to white fish, tuna, and shrimp, there was plenty of fun picking through the different types.

Hwangje Sushi says it also uses ingredients that aren't easy to find at typical casual sushi spots, depending on the season — sea bass, Spanish mackerel, herring, horse mackerel, sea urchin, sweet shrimp, and more. So even eating a single platter of assorted sushi felt like enjoying a mini omakase, with the fun of choosing what to try next. In short, it was one plate of happy indecision.

Why the aged neta stands out at Hwangje Sushi

Hwangje Sushi's real strength is its aged sushi. According to the store, they use quality ingredients like large flounder from Wando, superior Norwegian salmon, and farmed bluefin tuna weighing over 250kg, with live fish aged at low temperatures and prepared to order.

Aged neta isn't just about being 'fresh' — there's real enjoyment in the soft texture and the fish's own umami. The moment that big piece of neta melds with the rice in your mouth... ah, that's exactly why people eat aged sushi. The salmon's distinct richness spreads smoothly, while the white fish stays light yet has a chewy texture, making it fun to compare the differences between types.

When you crave something warm between bites of sushi, the udon does the trick! The hot broth with fried tofu and springy noodles was a comforting spoonful in between pieces of sushi.

I also enjoyed a golden fried croquette on the side — its crispy coating made it a great bite between sushi pieces. After the soft aged sushi, that one crunchy texture kept the meal from feeling monotonous and made it feel more substantial.

Is ordering both sushi sets worth it?

Hwangje Sushi felt less like a place chasing a cheap price and more like one that prioritizes ingredients, the size of the neta, the aging process, and a varied lineup. Ordering the Special Sushi 12P and Today's Sushi 10P together in particular let me compare a wide range of sushi, which made for a very satisfying meal.

A bite of big, aged neta, then a spoonful of warm udon broth! Reset your palate with pickled ginger in between, pick up another piece of salmon, and before you know it, the wooden plate is empty! Whether you're looking for dinner after a date at Ilsan Lake Park or want to properly enjoy aged sushi near Jeongbalsan Station, Hwangje Sushi Ilsan Main Branch is worth a visit.
