I made a reservation ahead of time for a gyukatsu lunch in Seongsu and headed to Gyuen Dang Seongsu Main Branch.

Seongsu has all kinds of restaurants, but this time I was craving something warm that I could grill piece by piece myself, so I went with gyukatsu.

Since I'd reserved ahead, I could settle in comfortably right away, and the tidy, well-kept space made for a pleasant start to the meal.

Personally, I think the charm of gyukatsu is exactly this — being able to cook each piece to just the doneness you want.

Placing just enough pieces on the small stove at a time meant I could watch them sizzle right in front of me, and since I wasn't grilling everything at once, I could enjoy it warm right to the end.

The outside stayed crisp while the inside kept a soft texture, and cooking it a bit longer brought out an even more distinct nutty, savory flavor.
