I brought home mugwort castella with whipped cream, plus a separate earl grey cream, and I was excited to see how it would taste. Just looking at it already felt like sweetness overload.

When I opened the lid, it said "Jinsim" (진심, meaning "sincerity") inside.

And the whipped cream between the castella layers was piled sky-high 😮

I cut off a chunk of the plump bread, and once I saw the cross-section... it was a visual I'd never seen before! The color of the mugwort castella was so curious and I wondered what it would taste like!

I considered chocolate, but I figured mugwort would feel more distinctive and, being less sweet, would pair well with the cream. With the white whipped cream piled between the mugwort-colored bread, it looked like a fancy dessert and really caught the eye...🤔

The taste was more than I expected — the mugwort's slight bitterness, the soft fluffy bread, and the whipped cream melting away smoothly, less sweet than I thought, so I could keep eating without getting sick of it!

I had a feeling mugwort and earl grey would go well together, so I bought extra earl grey cream, and it was firmer than the original cream, with a strong distinct earl grey fragrance that I loved.

The mugwort and earl grey aromas came together in this intriguing, addictive way that kept me reaching for more — I finished off half of it in one sitting! I think it's a sweet, soft national snack that you could eat endlessly with milk or coffee. Next time, for a dopamine boost, I'll have to stop by Jinsim Castella and try the chocolate castella with chocolate cream..😋
