Lately the evenings have gotten noticeably cooler, and I've been craving warm broth and a shot of soju more and more often. Walking through Nampo-dong's yang gopchang (beef tripe) alley, I keep catching glimpses of people grilling gopchang deliciously right there on the street.

Wanting to properly enjoy that atmosphere again, I headed to Bupyeong Yang Gopchang, well known as one of the go-to spots in Nampo-dong and Bupyeong, Busan. 🍻 Actually, I'd tried visiting once on a weekend, but it was so packed there wasn't a single seat. I left disappointed, but couldn't stop thinking about it, so I finally went back on a Monday evening after work.

How busy is Bupyeong Yang Gopchang on a Monday night?

And yet, even on a Monday night, the place was almost completely full! 😳 Places famous for gopchang in Nampo-dong really do stay busy even on weekdays. Since the weather's turned cooler, all the outdoor seats were already taken, but luckily a table opened up indoors just as I arrived — perfect timing! ✨

Ordering the gopchang hotpot at Bupyeong Yang Gopchang

When you think of Bupyeong Yang Gopchang, grilled tripe usually comes to mind first, but that day I was really craving warm broth, so I ordered the gopchang hotpot instead. It comes generously loaded with large intestine, tripe, and heart, along with plenty of vegetables, glass noodles, and rice cake sticks.

The moment the hotpot arrived, it already looked amazing. 😋 Plenty of cabbage, mushrooms, carrots and other vegetables, along with the offal and noodles, made it look hearty even before it started cooking. Once it was set on the burner and started to bubble, the broth turned darker and richer as the ingredients soaked up the seasoning.

Personally, I think gopchang hotpot is at its best not right away but the longer it simmers. The savory flavor from the gopchang combined with the rich broth and all the vegetables made it the perfect drinking snack. 🍶

What side dishes come with the hotpot?

Ordering the gopchang hotpot came with a nice variety of side dishes. Spring cabbage salad, cabbage salad, soft tofu, pickled onion, and even doenjang jjigae (soybean paste stew) — the basic spread was already quite substantial.

Since the hotpot was on the rich side, pairing bites with the spring cabbage salad or cabbage salad in between cleansed the palate nicely. The soft tofu was gentle and easy to eat, and with the doenjang jjigae included as a basic side, the table filled up fast. 😊

Later on, every table got a serving of old-style patbingsu (shaved ice dessert) on the house!

Eating it while soaking in the atmosphere of the Nampo-dong yang gopchang alley on a cool evening felt like properly enjoying Busan's food scene again after a while.

Fried rice at Bupyeong Yang Gopchang: saved for next time

Honestly, one of the main reasons I ordered the gopchang hotpot that day was to finish it off with fried rice at the end. My plan was to eat through the hotpot and then add fried rice to wrap things up.

But the portions were so generous that day that I was already stuffed just from the hotpot itself. 😂 In the end, I reluctantly decided to save the fried rice for next time. If anything, it just gave me another reason to come back. Next time I'll pace myself so I can get the fried rice in from the start!

When is the best time to visit Bupyeong Yang Gopchang?

On evenings like these, when the weather turns cool, I find myself looking for Nampo-dong restaurants or street-side spots in Busan. If you want to enjoy the street-side atmosphere along with the yang gopchang alley, I recommend Bupyeong Yang Gopchang! It was so busy on weekends there was no seating, and even on a weekday evening it was nearly full, so keep that in mind if you plan to visit.
