Bupyeong-dong offal grill, two fried rice: Bupyeong Yang Gopchang

In short

Bupyeong Yang Gopchang is a 30-year-old offal grill that has held the same spot in the yang gopchang alley of Bupyeong-dong, Jung-gu, Busan, known for its outdoor plastic-table street-stall mood. The stone-pan grilled offal arrives piled high with large intestine, tripe and heart alongside king oyster mushrooms, onion and potato, and the leftover sauce is used to fry two orders of rice pressed flat into crispy nurungji (scorched rice). The verdict: at Bupyeong Yang Gopchang, two orders of fried rice are the unwritten rule.

When you visit Busan, you have to hit that iconic soul-food alley — you all know which one, right? Get off at Jagalchi Station and step into the Bupyeong-dong yang gopchang (grilled intestine) alley, and the whole street is filled with a smoky, savory oil smell that makes your head spin. That 'Busan outdoor pojangmacha vibe' — sipping a drink at a plastic table in the cool night breeze — is just impossible to resist!

Among the countless gopchang joints, one has held its ground for a full 30 years — a true old-school institution, the number one yang gopchang spot in Nampo-dong, and a must-visit right by Jagalchi Station Exit 3: Bupyeong Yang Gopchang. Here's my full review after completely clearing the stone-pan grilled offal and even the fried rice.

What is the street-stall mood like in the Bupyeong-dong offal alley?

Bupyeong Yang Gopchang hangs a red sign over the Bupyeong-dong gopchang alley, and the outdoor tables in front catch your eye first. The moment you step into the alley, that red 'Bupyeong Yang Gopchang' sign grabs your attention! The outdoor tables were already full, and the alley across the way was buzzing with tourists and locals alike — a total festival atmosphere.

Plopping down on a plastic chair at dusk, listening to the sizzling grill — that's when it hit me: I'm really in Busan! Total romance and good vibes.

Does the indoor hall at Bupyeong Yang Gopchang seat groups?

The outdoor seats at Bupyeong Yang Gopchang are so popular that if they're full, or you just want a cool, comfortable spot, head inside. The interior is longer and wider than expected, so you won't need to worry about space even for a work dinner or small group gathering.

Next to the wall menu, there's a sign that says 'If you think you look young, bring your ID!' 🤣 That kind of witty humor already had me laughing before I even ordered.

Which side dishes come with the meal?

The moment you sit down at Bupyeong Yang Gopchang, the basic side dishes get laid out over a plastic sheet — soft sundubu (soft tofu) drizzled with a nutty sesame sauce, fresh spicy-and-tangy geotjeori (fresh kimchi), onions pickled in soy sauce that pair perfectly with the fatty offal, pickled radish, and cheongyang chili peppers. It's a solid spread.

And when you take a spoonful of the hot soup served in an earthenware pot, your empty stomach instantly warms up — the perfect warm-up before the main event!

What comes in the stone-pan grilled offal set?

Finally, today's star arrives — the stone-pan grilled offal! On the cast-iron pan, plump grilled intestine, chewy tripe, and mild-flavored heart are all tossed generously in a fiery secret sauce, piled up mountain-high with chunky king oyster mushrooms, onions, and potatoes.

The second I saw that vivid red sauce, I knew this place was a definite drinking-food champion — and I immediately understood why it's known as the yang gopchang holy land of Nampo-dong's bar scene.

When is the offal ready to eat?

Once the gas flame is on and the pan heats up, the staff skillfully cut the large intestine and tripe into bite-sized pieces. The savory oil bursting out of the intestine mixes with the sweet vegetable stock and the spicy-sweet secret sauce, bubbling away — the smell is absolutely insane!

Once the sauce reduces down and soaks all the way through, that's the golden moment to pick up your chopsticks.

How did the large intestine, tripe and heart taste?

Popping a plump piece of large intestine into my mouth... wow, the moment I bit down, an intense burst of savory fat and spicy-sweet sauce filled my mouth!! It's not just spicy for the sake of being spicy — the umami-packed sweet-salty-spicy sauce cuts right through the richness.

The tripe has an incredible crunchy-chewy texture, the heart is chewy and clean-tasting, and the potatoes soaked through with the offal oil turn out fluffy and delicious — you can't stop picking through it all. This really lives up to its reputation as the number one spot in Busan's Bupyeong gopchang alley.

How to eat the fried rice: press it into crispy nurungji

Once you've eaten nearly all the yang gopchang at Bupyeong Yang Gopchang, don't put your spoon down even if you're full. Why? Because the K-dessert is still coming! We didn't even hesitate — we went straight for two orders of fried rice.

They dump a bowl of rice into the rich, spicy-sweet gopchang oil, sprinkle on plenty of seaweed flakes, and mix it all up right there on the stone pan. Here's the pro-level tip for eating this like a champ:

  • Use your spoon to press the rice into a thin, wide layer on the pan
  • Keep the flame on low and wait 1-2 minutes until it crisps up like nurungji (scorched rice)
  • Scrape all the way to the bottom of the pan for a full bite

The moment you scrape up that golden-brown crispy rice from the bottom of the pan and shove a full spoonful into your mouth... ugh, the perfect finale! The deep umami of the sauce, the nuttiness of the seaweed flakes, and that crunchy nurungji texture come together in perfect harmony — if we hadn't ordered two fried rice, I'd have regretted it forever. We scraped that pan clean down to the very last grain, practically scrubbing a hole through it!

It was a magical evening where I got to enjoy both the addictive sauce flavor this place has carried for 30 years and the refreshing romance of an outdoor pojangmacha, all at once, haha. If you're around Jagalchi or Nampo-dong looking for a real old-school spot to enjoy a good bottle of soju, head straight for Bupyeong Yang Gopchang!

Two orders of fried rice is absolutely the unwritten rule 👍
