Where is Bupyeong Yang Gopchang, and what kind of restaurant is it?
Bupyeong Yang Gopchang is at 17 Bupyeong 2-gil, Jung-gu, Busan, in Nampo-dong — the place to go for yang gopchang (grilled beef tripe and intestine). Today I finally made it to this Nampo-dong spot I'd wanted to try soooo badly every time I went to Busan!

I've been to Busan countless times and only just now made it here ,,, I ate and instantly regretted not coming sooner ,,, ugh


Wait, it's this big ,,? There's a second branch and a second floor too, it seems!? I'm the only one who hadn't come here ,,, This outside shot is one I took on the way out. When we first walked in around 9pm it was completely full ,,, we barely managed to snag a seat haha

That's what we ordered! We came here for the stone-pan seasoned dish haha. This time we'd already had a first round so we got the small size, but next time I'm going straight here as round one, getting the medium, throwing in glass noodles, and finishing with fried rice too!!!



The best banchan: eolgali muchim (seasoned young cabbage)
Once we ordered, the banchan (side dishes) and soybean paste soup came out fast! That eolgali muchim (seasoned mustard green salad)? Or was it bomdong muchim? Either way, that was the kick. The savory depth of the seasoning was insane ;

Going in hard, gonna regret it tomorrow lolllllllllll


Is the small stone-pan seasoned offal enough for two?
The small stone-pan seasoned dish at Bupyeong Yang Gopchang was bigger than I expected for a small. Just visually there were four chunks of daechang, plus heart, tripe, mushroom, and potato — so many varieties it was fun picking through them ꒰⍥꒱ We'd had a shot or two of soju when it finally arrived !!! Aaah — already delicious (?)
If you wait quietly, staff come over and cut it up for you — watching this I was drooling so much. Was this my first meal ever or what ;; Ah — the visuals ,,, I want to eat it again ㅠㅠㅠㅠㅠ

From here it's a guessing game. Is it cooked yet? Can I eat it now? Kept glancing over at the staff lolllllllllll


Why the glass noodle add-on is worth ordering
Even the visual with the glass noodles thrown in was borderline violent ,,, adding a sarry (extra ingredient) is mandatory, you all know this. Glass noodles, udon, or danmyeon — you've gotta add at least one, it's just the rule.

Heart, daechang or tripe: which tasted best?
While the noodles cooked, I started with the heart, since it toughens up if overcooked. ...... Crazy good. The kind of flavor where the seasoning sticks right to your mouth, truly the textbook definition of a spicy-red-sauce dish. The heart was soft, nutty, and stole the whole show. And somehow the sauce soaked all the way in too, hehe

There was so much daechang you could just grab two pieces at once haha. Bite into it and the savory daechang fat bursts out, making you clap a hand over your mouth. When do you ever get tired of daechang ,, my hand just keeps reaching for the soju

I guess I was so hungry that my friend and I barely drank and just scarfed this down instead. Why was I so hungry ,,, ?? The glass noodles soaked up the sauce too and went perfectly with everything.
I couldn't get a photo but personally the yang (tripe) was number one. It's expensive so I didn't get to eat much, but I can't forget the texture and flavor of that first bite. How do I describe it — springy? Chewy? That kind of texture, and it was so good ,,, I wanted more of the daechang and heart too but honestly the tripe was the main reason I came. Which made it even happier ㅜ My friend said this was their first time ever eating yang gopchang. They kept saying the texture was so fascinating and delicious that they tried to hog the tripe all to themselves ;

Wait, and they also run a Smartstore for Bupyeong Yang Gopchang !!! If I'd known, I would have ordered and tried it ages ago ㅜㅜㅜㅜㅜ I only found out when I visited, ugh. So the moment I got home I ordered from there right away!
I'm curious about the salt-grilled version too and the hot pot looks delicious, so I'm going to buy and try each one. I'll have to record that too, hehe. And it's not just for eating at home — this seems like a great menu to bring along camping or traveling haha. I've actually got a glamping trip coming up soon, and I'm torn over whether to bring the salt-grilled or the hot pot ,, now that I know this flavor, I think I'll be visiting every time I'm in Busan.
