Nampo-dong offal restaurant full by 6pm Sunday: Bupyeong Yang Gopchang
In short
Bupyeong Yang Gopchang is the busiest yang gopchang (grilled beef offal) restaurant on the offal street in Nampo-dong, Jung-gu, Busan. Arriving at 6pm on a Sunday for two, Bupyeong Yang Gopchang's main building was already nearly full, so the pair were sent to the shop next door, where they worked through a medium stone-pan seasoned offal order with heart, large intestine and tripe, siraeguk (dried radish green soup) and a closing plate of fried rice. Lines form from 6:30pm, so coming a little earlier is the safer plan.

Why Bupyeong Yang Gopchang is the busiest spot on Nampo-dong's offal street
Bupyeong Yang Gopchang is a yang gopchang (grilled beef offal) restaurant at 17 Bupyeong 2-gil, Jung-gu, Busan, right on the Nampo-dong offal street. It's within walking distance of Busan's Gangtong Market and Gukje Market, making it perfect for dinner after a market stroll.
To celebrate the weekend, my boyfriend and I went to Busan's Gangtong Market and Gukje Market! It had been ages since I'd wandered around a market and it was so much fun — why did it take me this long to finally come here, haha.
Right near Gangtong Market, within walking distance in Nampo-dong, was the famous Bupyeong Yang Gopchang! A friend had raved about it so much before that I'd always wanted to go, and since I happened to spot it, we decided to check it out.

Here's the outside of Bupyeong Yang Gopchang! I didn't realize there was an actual yang gopchang street in Busan — both sides of the road were lined with shops selling gopchang and makchang (offal), and this one had the most people by far.
Since the weather was nice, they'd set up tables outside — doesn't it have such a great vibe!?
What time to arrive on a Sunday evening to skip the wait
Bupyeong Yang Gopchang was almost fully booked around 6pm on Sunday, and a wait line started forming from 6:30pm. When we passed by around 4:30–5pm, there weren't many customers, so keep that timing in mind if you're planning a visit.

This is the inside of the main building at Bupyeong Yang Gopchang! There were signatures from various celebrities on the wall, haha — proof this is a real hidden-gem spot! Since it was full here, we were guided to the shop right next door.

Bupyeong Yang Gopchang's menu and the medium stone-pan seasoned offal for two
At Bupyeong Yang Gopchang, you order once you're seated. Since the small, medium, and large sizes of the stone-pan seasoned offal only differ by ₩5,000 each, and we were pretty hungry, we ordered the medium stone-pan seasoned offal plus fried rice for two.

Each table has an order sheet with more detailed menu items listed, so check that out — fried rice can be ordered once you've finished the meat!

The default side dishes set at Bupyeong Yang Gopchang! Siraeguk (dried radish green soup) — it was genuinely delicious, haha, I finished the whole bowl myself.

How the stone-pan seasoned offal tastes: heart, large intestine and tripe
The medium stone-pan seasoned offal at Bupyeong Yang Gopchang came with not just large intestine but also tripe, heart, onion, potato, and king oyster mushroom. Once it was cooked just right, the staff came and cut everything up for us.

As it cooked further, the fat from the large intestine started rendering out, turning everything irresistibly glossy!

The stone-pan seasoned offal at Bupyeong Yang Gopchang!!! Doesn't it look incredibly appetizing!? Once the seasoning had soaked in a bit, we started with the heart first!
The heart was soft with great texture! The sauce itself was so tasty you didn't need any dipping sauce or side dish — I recommend just eating it as is!!
Next was the large intestine! It had soaked up even more seasoning than the heart!! It melted the moment you bit into it, and the savory flavor was insane!!!

The tripe had zero unpleasant smell, and I'm usually not a big fan of it, but maybe because the seasoning was so good, I ate a ton of it, haha.

And the fully cooked potatoes and king oyster mushrooms too~ We ate everything so happily!

Finishing with fried rice cooked at the table by staff
The fried rice at Bupyeong Yang Gopchang gets ordered once you're nearly done with the meat, and the staff fries it directly on the pan for you. It came out beautifully golden-brown and delicious.

Depending on your preference, if you like rice, go with the fried rice like I did; if you prefer noodles like tteok or udon, adding extra noodles would be great too!
Most people at Bupyeong Yang Gopchang were eating the stone-pan seasoned offal, but I noticed a lot of people also ordering the hot pot and grilled versions! I'll have to come back to try other menu items next time~~ On a nice day, go enjoy the atmosphere and some great food!
