At this Wangsimni dessert café, ordering drip coffee comes with a pamphlet describing the beans, which was nice — I could drink it knowing exactly what I was tasting.

Personally, when I go to cafés I tend to like drip coffee that lets me slowly enjoy the aroma and flavor of the beans. It wasn't too heavy to pair with dessert, and sipping it slowly, one mouthful at a time, was a nice way to rest.

Nothing beats a financier as a light dessert to go with coffee. If cheesecake is the heavier, richer dessert, the financier was perfect for a bite between sips of drip coffee.
