Watching the octopus skewers get torch-seared at the counter

The skewers I ordered at Munkkocchi Mungangjeong Jeonju Hanok Village Branch are grilled right in front of you, and watching the process was honestly a lot of fun. The owner blasts the skewers with a torch, searing the surface as flames whoosh over them, and every time the fire wraps around a skewer, that smoky, savory char smell spreads all the way out to the street. Just watching them turn golden on the grill was enough to make my mouth water.

Next to the grill sat a row of sauce containers, so it looked like the skewers get an initial char-grilling first, then are finished with a sauce of your choice. The owner flipped each skewer carefully, multiple times, to really lock in that smoky flavor, which somehow made me trust the place even more. Since it's not just reheated but char-grilled first and then grilled again after saucing, it made total sense that the texture ended up crispy outside and juicy inside. Watching everything sizzle right in front of me turned the wait itself into part of the show. It's street food, but the care in the cooking process made me trust it even more.

How the katsuobushi octopus skewer and teriyaki chicken skewer taste

I ordered the katsuobushi octopus skewer and the teriyaki chicken skewer. Both had that proper smoky torch-char, crispy outside and chewy inside. The octopus skewer's sweet-salty sauce mixed with katsuobushi (bonito flakes) and mayo tastes like an upscale takoyaki! And the teriyaki chicken skewer is packed with the savoriness of golden melted cheese and juicy chicken. The deep umami combined with a subtle charcoal-grill scent makes it perfect with a beer or as a late-night snack!

What really got me with the katsuobushi octopus skewer was that the moment you take a bite, the bonito flakes on top wiggle and sway as if they're alive — dancing in the heat, which adds to the fun just to look at. The sauce was well balanced, not too sweet, not too salty, so I kept going back for more.

The teriyaki chicken skewer gets brushed with teriyaki sauce multiple times while it's char-grilled, so it comes out glossy, and juice practically leaks out with the first bite. The cheese melts subtly into the chicken, giving it rich flavor without being greasy. It's a great quick bite when you're peckish mid-walk, and just as easy to enjoy sitting down with a beer — 100% repeat visit for me.
