Jjimgoeul Gajwa Branch is a monkfish stew (agujjim) restaurant in Gajwa-dong, Jinju, run as the Gajwa-dong location of the Jjimgoeul original store in downtown Jinju. Arriving right at the 11:00 opening meant walking straight in with no wait, then ordering the basic monkfish stew in the small size on the table tablet. The plump monkfish, crunchy bean sprouts and spicy, savory sauce at Jjimgoeul Gajwa Branch emptied a bowl of white rice in no time.

Nuri Maeul Gamjatang Itaewon Branch is a 24-hour gamjatang (pork bone stew), braised bone and flame-grilled bone restaurant on the second floor of a building 22m from Itaewon Station Exit 4, in Yongsan, Seoul. The writer ordered the flame-grilled bones in the small size with ramyeon noodles and self-serve fried rice, which filled the hot plate, and rates the fried rice stirred with meat picked off the bones as the highlight. Two things to know before going to Nuri Maeul Gamjatang: self-serve fried rice needs an order for two or more, and the sundae (blood sausage) add-on goes with the soup dishes, not the grilled bones.

300°C Seafood Galbi Main Branch is a seafood and braised short rib restaurant on Masiran-ro in Yeongjong, Incheon, close to Eulwangni Beach, Wangsan Beach and Inspire, so it works as a stop on a drive around the island. Ordered at medium spice, the haemul deunggalbijjim (braised short ribs with seafood) came with octopus, abalone, squid, roe, fish milt, rice cakes and short ribs already off the bone, followed by refills of self-serve bean sprouts and a fried rice finish. From the seaweed soup to the last spoon of fried rice nothing missed, so 300°C Seafood Galbi belongs on a Yeongjong Korean-food list.

Baekok Dongtan is a pork gomtang (pork bone broth soup) restaurant in the basement 1 food court of Lotte Department Store Dongtan in Hwaseong, Gyeonggi. On a visit with two children, the order was two pork gomtang sets — each with 2 cabbage dumplings and a soft drink — plus one kids' gomtang, and Baekok Dongtan provided a baby chair and toddler tableware. The broth at Baekok Dongtan is mild and clean, so both kids finished their bowls.

Mujinjang Sik-yuk Kkori Gomtang is a third-generation Korean beef tail soup (kkori gomtang) restaurant near Peace Square in Mokpo. A ₩27,000 bowl of Korean beef tail soup brought 4–5 palm-sized chunks of tail in a rich, already-seasoned bone broth, served with a chive salad seasoning mix and well-aged radish kimchi. Mujinjang Sik-yuk Kkori Gomtang has no dedicated parking, so roadside or a nearby public lot is the option, but with drinks at ₩3,000 it is worth it for a truly filling meal.

The Meat All-in-One bibim poke was ordered with the mixed-vegetable base only for a low-carb meal, paired with a Green Cleanse Juice, and the signature Salering bibim sauce had a quiet heat that built up from behind, just under Jin Ramen Spicy. The beef brisket and pork shoulder steak were cooked just right and the vegetables were fresh, making Salering a light but filling one-plate meal.
