Knife-cut pork belly on the stone plate at Dojeok Suwon

From knife-cut pork belly to hangjeongsal (pork jowl), the meat menu is varied, and grilled on a stone plate the pork belly is so juicy and tender with zero gamey smell — Dojeok is always good no matter when you eat there! Sharing my review from a rainy day visit!

It's tucked inside Nahyeseok-geori in Inge-dong, so it's not a spot you'd stumble on while passing by, but it's always packed with regulars! For parking, you can use the Castle Tower building right next door for up to 4 hours free!

At 6:30pm on a weekday, group tables and family tables were already eating, and past 7pm the place was completely full — proof it's a real local favorite! Tables can be pushed together, so it's great for group gatherings too.

There are only four options — pork belly, gochujang pork belly, hwangje-deossal, and hangjeongsal — which really makes it feel like a dedicated meat specialist, and there's a good variety of sides that pair well with the meat! We ordered 2 servings of pork belly and 1 serving of hwangje-deossal!

Kimchi, seasoned bean sprouts and green onion, salad, wrap greens, and doenjang jjigae (soybean paste stew) loaded with tofu make up the side dishes! Everything that goes well with meat is all here, right? The sweet potato grilled on the stone plate especially is the real deal, so finish the lettuce and perilla leaves quickly and go for a refill⭐

They place the knife-cut pork belly on the thick stone plate with the fat side down, and you just leave it as is! Staff come back and forth to check and grill it, so you can just relax and wait! At most BBQ places the person grilling has to work hard and can't chat comfortably, but here the staff grill it for you, so you can talk and have a drink at ease!

They cook the sides golden brown too, and since it's scored, the inside cooks quickly while staying juicy!

Once the outside is fully cooked, they take the meat away, cook it a bit more, cut it neatly, and set it back on the plate! This way it's cooked front and back and ready to eat immediately, plus the oil doesn't keep splattering so you can enjoy it comfortably. For the kimchi or sweet potato you can grill alongside, wait until they tell you the pork belly is done before adding them, so the stone plate doesn't burn!

I wrapped the pork belly the moment it was done and tried it — it really was so tender that even people who dislike chewy meat could enjoy it happily! Add the golden-grilled kimchi from the stone plate and pickled onion into the wrap, and it cuts the richness while maximizing the pork belly's clean flavor! I love pork belly but hate when it's dry enough to get stuck in braces or has a gamey smell — Dojeok's knife-cut pork belly was juicy, tender, and nutty 👍

Usually after four or five pieces of pork belly I get tired of it and stop eating, but at Dojeok there's such a variety of side dishes to eat alongside that it never gets boring! The wrap greens were fresh with no wilted parts, and when you ask for a side refill they bring you a generous amount — much more convenient than using a self-serve bar!

Hwangje-deossal is tender yet chewy, so it's perfect to order when you've had pork belly and still want more meat! We added one serving, and it definitely felt cleaner in flavor — tasty even eaten simply with pickled onion!

Staff were all kind and the ventilation was great, keeping Dojeok comfortable! From the pork belly to the side dishes, everything was delicious — I'd recommend it for family gatherings or company dinners too!
