Today I visited Dojeok, my go-to recommendation whenever I want Korean BBQ in Inge-dong, Suwon!

This isn't just any Korean BBQ spot — it was featured as a pork belly master on the TV show Generation of Masters (생활의달인), which made me even more curious. After trying it, the gochujang pork belly marinade especially hit my taste 🤍

Where to park at Dojeok Suwon: a 4-hour pass at Star Castle Tower

Dojeok Suwon lets you use the parking lot at the Star Castle Tower officetel building right next door. Parking is always a bit of a worry when eating out in Inge-dong, right? ㅠㅠ

Dojeok let us use the parking lot at the Star Castle Tower officetel next door, and they even gave us a 4-hour parking pass!

No circling the Inge-dong side streets looking for a spot — we could park with plenty of room and eat comfortably, which is honestly a huge plus haha

What side dishes come with the meal?

Once seated, you get crunchy seasoned bean sprouts, kimchi, pickled onion, and more — the kind of spread your chopsticks keep reaching for while you eat. The pickled onion in particular paired well with the gochujang pork belly, cutting through any richness.

And now, today's star — the gochujang pork belly! The meat came out coated in the most appetizing red marinade.

I heard the owner makes this gochujang marinade himself!! They grill it piece by piece on the plate, and as it cooks, the smell of the marinade rises up — honestly hard to resist ㅋㅋㅋ

The red marinade got deeper and glossier as it cooked — the visuals were on point... Since the grill plate lets the fat drip down and away, even seasoned gochujang pork belly didn't feel as greasy as I expected.

The edges browned up nicely while the center stayed juicy, so the texture was great too.

Once it was cooked enough, they cut it into bite-sized pieces and grilled it a bit more. Once cut up, it turned out to be a pretty generous portion?! A grill plate full of gochujang pork belly — so satisfying haha

After it was properly cooked on the grill and cut into bite-size pieces, the visuals were complete! Being pork belly, you still get plenty of that savory fat flavor, but since the fat drains off the grill plate, it wasn't as greasy as I thought.

The gochujang marinade is rich but not so strong that it overpowers the meat — sweet and spicy in a balanced way! The seasoning soaks in all the way through, so it tastes great even eaten plain haha

Even if you usually prefer plain pork belly, I'd say you have to try the gochujang pork belly here at least once!

Bibim guksu with gochujang pork belly: how the pairing tastes

We also ordered bibim guksu (spicy mixed noodles). The sauce is sweet and tangy with a bit of spice at the end that wakes up your appetite.

The noodles were evenly tossed in the sauce, so slurping them down was easy — but the real winner was piling a piece of gochujang pork belly on top and eating them together! Sweet, tangy, spicy noodles plus savory pork belly — that combo kept going down even when I was already full ㅋㅋㅋㅋ

Is Dojeok Suwon in Inge-dong worth a visit?

I visited Dojeok in Inge-dong out of curiosity since it was featured on Generation of Masters! The gochujang pork belly with its house-made marinade was especially delicious, and the owner was kind too, so it was a pleasant meal overall.

On top of that, getting a 4-hour parking pass for Star Castle Tower in Inge-dong meant I could visit without worrying about parking.
