These days the evenings have gotten cooler, so it's perfect weather for going out to eat something delicious after work 😊 This time I visited Uhwa Gopchang, a gopchang (grilled beef intestine) restaurant in Dunsan-dong that's worth a trip if you love offal!

The Uhwa Gopchang sign is big enough to spot from far away! Maybe because it was evening, the tables inside were nearly full, but with the doors wide open you could see the whole atmosphere from outside — it had this old-school vibe and lively energy that I loved 😄

Even on a weekday evening there were so many people that I waited about 30 minutes before getting in! I think it'd be good to reserve ahead on Naver.

Here's the Uhwa Gopchang menu — more varied than you'd expect. You can order just gopchang or just daechang on their own, but the Uhwa combo, which lets you try several parts at once, is ₩23,000 per person! There are also side dishes like flying fish roe fried rice, yukgaejang jjolmyeon, doenjang hot pot, cold kimchi somyeon, mul naengmyeon, and ramen, so you can properly finish off a meal after the gopchang 👍

They bring out seaweed soup, which was nice for warming up your stomach before the gopchang, and the portion was generous enough to spoon up throughout the meal.

They also serve old-style tteokbokki (spicy rice cake) with chewy rice cakes and fish cake as a basic side 😋 I kept picking at it while waiting for the main dish — it had that keep-reaching-for-it kind of taste haha

Raw liver and cheonyeop (beef tripe/omasum) also come out — the staff actually asked us first, would you like some? If you say yes, they prepare a plate like this, perfect for anyone who loves raw liver and tripe! The raw liver looked so fresh it had a glossy sheen, and the tripe was neatly trimmed. Dip it in the sesame oil dip that comes alongside and it adds a nutty flavor — felt like the drinking snacks had properly started even before the main gopchang arrived.

What's in the Uhwa combo and the order to grill it

💛The Uhwa combo💛 — the moment the platter arrived, it looked seriously hearty. Gopchang, makchang, daechang, yeomtong (beef heart), and chadolbagi (thinly sliced beef brisket) were all laid out evenly, along with chives, bean sprouts, kimchi, garlic, potato, and king oyster mushroom filling the whole plate 😆

At Uhwa Gopchang the staff grill it for you directly, which was so convenient ✨ Gopchang easily gets tough or burnt if grilled wrong, but they handled it perfectly, so all we had to do was wait and eat! Gopchang, makchang, and daechang come pre-parboiled, and once cooked, they told us to eat in the order: yeomtong → gopchang/makchang → daechang.

Yeomtong and chadolbagi can get tough if overcooked, so we ate those first — no gamey smell, just a clean, tender texture. A great light way to start before getting into the fattier parts.

Time for the real gopchang. Cutting into the golden-browned gopchang, the inside was properly packed with fat, and the nutty flavor hit right away 💛 The outside was chewy while the inside was soft and rich — this is exactly why people eat gopchang, I thought haha. It's delicious plain, but I especially loved dipping it in the sauce loaded with cheongyang chili — the spicy kick cuts through the gopchang's richness so well.

Eating it continuously can get a little greasy, but pairing it with chives, bean sprouts, or kimchi balanced it out perfectly 🤤

Gopchang without soju just isn't complete, right? A bite of nicely browned gopchang and daechang, then a refreshing cheers 🍻 Uhwa Gopchang is a great place to visit whenever you're craving gopchang in Dunsan-dong! The Uhwa combo, letting you enjoy gopchang, daechang, makchang, and yeomtong all together, was hearty, and having the staff grill it for us made the meal so easy. The combo of fat-packed, nutty gopchang with a glass of soju was the best part :) If you're looking for a Daejeon gopchang restaurant or a company dinner spot in Dunsan-dong, I recommend Uhwa Gopchang ✨
