Sauce-on-request pork cutlet with soup refills in Cheonan: Jinsim

In short

Jinsim Wang Donkatsu Cheonan Buldang is a Korean-style pork cutlet restaurant on the ground floor of a shopping building in Buldang-dong, Cheonan. The writer asked for the Jinsim Wang Donkatsu (₩10,900) with the sauce poured on request, keeping it crispy from first bite to last, and refilled the savory self-serve soup several times. The Cheese Waterfall Donkatsu (₩15,900) was good enough to order again on a repeat visit.

Exterior — a big, clear sign

The sign was big and clear, so I could spot it easily even from a distance.

Exterior of Jinsim Wang Donkatsu on the ground floor of a shopping building

Jinsim Wang Donkatsu Cheonan Buldang sits on the ground floor of a shopping building, tucked a little off the main road in Buldang-dong. The exterior feels clean and modern, with wide glass windows that let you see right in — and in the evening the warm interior lighting gave off a really cozy vibe!

Interior — table spacing and mood

Spacious interior and table spacing

Walking in, the table seating catches your eye right away. The space is bigger than expected and the tables are spaced comfortably enough for a family meal or a get-together with friends.

Menu board and brand story displayed on the wall

The menu board and a bit of the brand's story are simply displayed on the wall, and the overall bright, comfortable atmosphere would work well for a date too.

Menu — noodles and rice dishes besides donkatsu

The menu is mostly donkatsu (pork cutlet) — Jinsim Wang Donkatsu, Cheese Waterfall Donkatsu, Spicy Wang Donkatsu, fish cutlet, and more — but they also serve noodles and rice dishes. Jjolmyeon (chewy cold noodles), udon, naengmyeon (cold noodles), cold buckwheat noodles, even bibimbap — I loved how varied the menu was haha.

What's at the self-serve bar?

The self-serve bar was well stocked too. Pickled radish, kimchi, lettuce wraps, ssamjang (dipping paste), soup, broth, and small plates were all free to grab, so you could put together your own combo.

I'd read a lot of reviews saying the soup is rich and delicious, and it really was — savory and nutty, I went back for refills several times hahaha. There's also a self-packing station if you want to take leftovers home.

What we ordered — Jinsim Wang Donkatsu and Cheese Waterfall Donkatsu

That's what we ordered!

Two plates: Jinsim Wang Donkatsu and Cheese Waterfall Donkatsu

Both dishes looked great, but the Cheese Waterfall Donkatsu especially lived up to its name — the cheese literally poured down like a waterfall, fun to watch too.

Asked for sauce on the side, stayed crispy to the last bite

The Jinsim Wang Donkatsu comes as one whole piece of pork loin cutlet. It's the real deal, old-school Korean-style donkatsu, with that classic crispiness balanced by tender meat. The cabbage salad on the side had plenty of dressing too! And since I asked for the sauce to be served on the side rather than poured over, I got to enjoy the cutlet crispy from start to finish haha.

The sauce itself wasn't too heavy, keeping things clean so the cutlet's own flavor came through. Paired with rice, it made for a really filling meal. And the portion was seriously bigger than I expected haha. If you order the two-piece wang donkatsu, you're definitely taking some home!!!

Cheese Waterfall Donkatsu, best with a lettuce wrap

If you love cheese, the Cheese Waterfall Donkatsu is a menu you won't regret at all. The cheese melts inside and blends with the cutlet, filling your mouth with a nutty, creamy flavor.

Wrapping it in lettuce or adding pickled radish helps cut through the richness of the cheese and keeps things clean. I think I'd order the Cheese Waterfall Donkatsu again if I went back!!!! That's how much cheese there was, and it was crispy too haha.

A must-visit in Buldang-dong, Cheonan! If you're deciding what to eat for lunch or dinner, I recommend Jinsim Wang Donkatsu Buldang — a place that really does serve a giant cutlet! ♥️
