Inge-dong Korean BBQ in Suwon: aged pork belly and jowl, Dojeok Suwon

Before I even went, I'd heard this place was run by a winner from the show Life's Grand Prize Winners (생활의 달인), specializing in knife-cut pork belly — and I had high expectations. It really was delicious, haha.

A Korean BBQ restaurant near Nahyeseok-geori in Inge-dong

Dojeok is located near Nahyeseok-geori in Inge-dong, so it's a great spot for a date, a get-together, or a company dinner!

The interior was bigger than I expected, good for a meal for two but also fine for larger groups or work dinners! The ventilation system is well done, and each table has space to store personal belongings, so eating was really comfortable, haha. Smoky-smelling clothes is always a low-key worry at Korean BBQ places, so that convenience really helped.

What side dishes come free at Dojeok Suwon?

The side dishes came out generously too!

I especially loved this salad — I think I finished almost all of it before the meat even arrived. Plus, at Dojeok, doenjang jjigae is included as part of the side dishes!! These days most places make you order it separately, so having it come free was such a nice touch.

Sizzle, sizzle...

The staff set it up for us just like this! The meat looked thicker and more delicious than I expected.

The owner apparently trims the meat by hand every day to keep the thickness consistent :) Maybe because it's aged for 72 hours, the juices really came through when grilled, and the pork itself had great flavor!

Pork belly that's too thin cooks fast and dries out, while too thick can feel like a lot to eat — but this had just the right thickness, and the texture was great!!

The staff grilled and cut the meat for us, which made eating both easy and delicious!!

It kind of felt like pork belly grilled on a cauldron lid!!

We also grilled kimchi along the edges of the pan!!

How chewy is the premium pork jowl cut?

Premium pork jowl cut (황제덧살) for 17,000 won

We ordered the next round — the premium pork jowl cut — ahead of time so the flow wouldn't stop, and moved the finished pieces to the edge of the pan to eat!

It was my first time trying premium pork jowl cut, and I especially loved the moderately thick, chewy texture. Grilled golden on the pan, the outside gets nutty and crisp while the inside stays juicy, so the savory flavor builds the more you chew! If you like tender cuts like pork belly but also want something chewy in the mix, I'd recommend this cut too.

Once you've eaten a good amount of meat, bibim guksu is a must! I was torn between this and cold noodles, but I don't often see noodles on the menu at BBQ places, so I went with the noodles, haha. Sure enough, the tangy-sweet-spicy sauce went so well with the meat!!

If you're looking for pork belly in Inge-dong, Dojeok Suwon is worth a visit at least once! I'd especially recommend it to anyone who wants to properly enjoy aged pork rather than just the ordinary kind. It was a great spot for meeting friends over BBQ in Inge-dong or for a delicious meal on a date :)
