Recording this calmly, in colors that don't get too excited. I came looking for Huiyeol, wanting to tip back a glass of something over Korean grilled beef in a quiet space.

Located near Gyodae and Seocho stations, this is a place serving high-level Korean grilled dishes, hot pot rice, and a wide range of side dishes to drink with. The interior has a modern, calm feel overall, making it a great spot to stop by for a work dinner or gathering near Gyodae or Seocho stations.

That day, I ordered the 2-person grill set plus Korean beef tartare and left with a satisfyingly full glass — here's the plain record of it.

Huiyeol Seocho Gyodae Branch: location and parking

It sits right between Seocho Station Exit 8 and Gyodae Station Exit 10, roughly a 5–7 minute walk from either exit.

Weekend hours were a bit unclear, so I'm attaching a photo — I'd recommend calling ahead to check.

Parking is available. You can use the lot in front of the restaurant or the designated lot.

It's tucked down an alley in a basement space with a modern-feeling interior. Seeing all the banners with words like Korean beef ribs and hot pot rice got me pretty excited.

This was posted at the entrance. Plenty of other dishes caught my eye too, but I came for the corkage-free policy — that alone was too good to pass up!

The interior is really clean and tidy. The tables were spaced out generously, which I liked.

This is Huiyeol's menu board. Starting with lunch set menus, they sell several sets alongside plenty of à la carte options, and there's a good lineup of traditional Korean liquors too.

These are Huiyeol's basic side dishes (banchan). They really came out looking clean and neat. The bean sprouts and sweet pumpkin salad in particular were genuinely delicious!

This is Huiyeol's daetongju, a rice liquor served in a bamboo container. We ordered one as an appetizer before moving on to the whiskey we brought in under the corkage-free policy, and it was better than I expected. At around 11% ABV, it wasn't too heavy and had a subtly delicious flavor — mellow, a bit sweet... My companion said it tasted like Sohl Nun (a Korean pine-needle soda), but I've never had that, so I couldn't say. Haha.

This is Huiyeol's grilled Korean beef flower short rib (hanu ggotgalbisal). Conveniently, it comes out already fully grilled, so you can just dig in right away. It was really, really, really, really tender and delicious.

For those who like it a bit more well-done, they said you can flip it and cook the other side longer to your taste, but we like medium-rare, so we ate it as it came! Eaten with the other garnishes, it was heavenly... and with the corkage whiskey, doubly heavenly...

This is Huiyeol's doenjang stew (soybean paste stew). It has a savory doenjang base loaded with tofu and vegetables, giving the broth a rich, deep flavor. It actually leaned a bit closer to the deep taste of cheonggukjang (fermented soybean stew). It tamed the greasiness of the meat nicely and paired well with the drinks.

This is Huiyeol's geumtae (golden threadfin bream) hot pot rice. Nicely grilled geumtae fillet comes on top of fluffy rice cooked in a stone pot, and you mix it yourself so the savory flavors blend together. The clean yet deeply savory geumtae paired beautifully with the rice, and I scraped up every last spoonful. I even ate the slightly crisped rice at the bottom as nurungji (scorched rice), cleaning the pot right out to finish the meal!

Oh, and the soy sauce for mixing looked a little light — I'd say about two spoonfuls would be just right.

This is Huiyeol's Korean beef tartare (yukhoe). We ordered it because we still wanted more after everything else. It's served Jeolla-style, meaning you mix it with the seasoning sauce on the side before eating. Dipped with laver and radish sprouts, the tartare had a slight tuna-like taste — it was interesting and delicious!

Huiyeol was a great Gyodae-area Korean restaurant and bar for enjoying tidy Korean grilled dishes and hot pot rice with a clean drink to match, near Gyodae and Seocho stations. The smooth flow of the 2-person set course, the chewy satisfaction of the Korean beef tartare as a side dish, and the private atmosphere all made for a really high level of satisfaction with the meal and drinks.
