Craving good pork belly? First step: check if there's a Mat Chandeul nearby haha. For me, Mat Chandeul is already a trusted go-to, so I was so happy to find one in Moran!! The meat is great, but the side dishes are just as good, so it's the place that comes to mind whenever I want pork belly. Let me introduce Mat Chandeul Wang Sogeum Gui Moran Branch, which I visited recently!

Inside Mat Chandeul: partitioned tables, open seats and back rooms

Walking into Mat Chandeul Wang Sogeum Gui Moran Branch, it was bigger than expected. There are tables with partitions between them and also open seating, so you can pick whichever atmosphere you prefer.

There's also room-style seating further in, which would work well for groups or company dinners! The interior is quite spacious and looks like it can seat a lot of people.

The side dishes: wood ear mushrooms and mukbap with the basics

After ordering, the basic side dishes started arriving one by one — wrap vegetables, pickles, julienned radish, washed aged kimchi, and scallion salad!

There were so many side dishes to eat with the meat that it was fun to switch up the combination with every bite haha. And personally, what surprised me was the wood ear mushrooms! I think this was the first time I've seen wood ear mushrooms served as a basic side at a barbecue restaurant.

There were also dipping sauces for the meat — wasabi and salted fermented anchovy (myeol젓)! I really love wasabi with meat, so this combo was perfect for me haha.

And that's not all — mukbap (acorn jelly soup) also comes as a basic side. When your mouth starts feeling a bit greasy from the meat, one spoonful of mukbap resets everything. Perfect to eat in between bites of meat.

The B set for two: 650g, half pork belly and half pork neck

We came as two and ordered the B set (650g of meat)! It's usually enough for 3–4 people, but we're a big-eater couple who can finish it together haha, so we didn't hesitate to order the B set 😎 We went half pork belly, half pork neck, and chose doenjang jjigae for the stew!

The set menu is ₩2,000 cheaper than ordering meat and stew separately, so I recommend the set if you're getting both! And if you want to try multiple cuts like us, half pork belly + half pork neck comes highly recommended 😋

Instead of putting the meat straight on, the staff carefully checked the grill's temperature with a thermometer several times before grilling! Ooh, that felt very professional!!

They also prepared salt and pink salt on each individual plate, and ground the pink salt fresh right there with a grinder — such a nice touch!

Finally, the meat we ordered arrived! 🥩 You can tell from the photo, right? The cuts looked thick and fresh, so my expectations shot up the moment it hit the table haha. One thing I loved — there was a sticker on the meat accurately stating the weight, 650g. Seeing that made me trust the place even more 😆 Especially looking at the thick pork belly, I couldn't wait to throw it on the grill and start eating...🤤

I've been to other Mat Chandeul locations too, and every time I go, I'm reminded how well they grill the meat haha. I don't know how they manage to line it up so neatly in a row and grill it so beautifully. They cut it into bite-sized pieces, all evenly sized, with just the right texture for chewing — I was already drooling.

Once the meat was cooked through a bit, the surface turned a golden brown and that thick, juicy look really came alive haha. You could see the fat on the pork belly turning golden as it cooked — it looked delicious just from the visuals.

The staff member watched the state of the meat, flipping each piece, cutting it into evenly sized bite-sized pieces, and grilling it neatly — all we had to do was watch the meat cook to perfection! Especially with pieces cut this thick, I could already tell each bite would have juicy flavor and a satisfying chew — I couldn't wait to eat!

I'm someone who can't eat meat without doenjang jjigae (soybean paste stew) by my side 🙋🏻‍♀️. And I'm also the type who feels let down if the meat is amazing but the stew isn't great... yep, that's me too haha. At a barbecue restaurant, the doenjang jjigae actually matters a lot to me, and the one at Mat Chandeul Wang Sogeum Gui Moran Branch was rich and savory — perfect alongside the meat!

It was also loaded with tofu and beef brisket, so the fillings were substantial too! Whenever I go to Mat Chandeul, I always order the doenjang jjigae without hesitation haha. The portion was generous enough that even a group could share it without running short.

First bite: pork belly in salt with grilled baek-kimchi

The meat finally cooked to a beautiful golden brown — crispy outside, juicy inside, looking absolutely packed with flavor!

The first bite had to be pork belly, of course! I dipped it plain in just salt to taste the meat's natural flavor. Wow... I thought it was delicious the last time I had it, and it didn't disappoint this time either. The meat wasn't dry at all — the juices were locked in, and the more I chewed, the more savory it got. Best of all, it wasn't overcooked to the point of losing flavor; it was grilled to just the right degree. Pork belly can get greasy with all that fat, but a touch of wasabi cuts right through the richness.

They also grill baek-kimchi (white kimchi) and potatoes alongside the meat! And this grilled baek-kimchi is seriously a hidden gem 🔥 The tangy flavor unique to baek-kimchi gets even better once it's lightly grilled. Eat a piece of rich pork belly, then top it with grilled baek-kimchi — it cuts the greasiness completely, and I couldn't stop reaching for more.

Put a piece of meat on top of grilled baek-kimchi, add a bit of pickle, and take a bite... wait, what is this combination? Knockout. The tangy baek-kimchi lets the meat's juices spread through, and with the pickle on top, the greasiness disappears completely — I kept going back for more haha.

Once the meat was fully cooked, the staff neatly gathered it to one side of the grill so it wouldn't burn! Seeing the meat piled up on one side made me feel weirdly rich haha.

I also tried dipping a piece in the myeoljeot (salted fermented anchovy) — the salty umami added a totally different feel! Switching between sauces instead of sticking to just one made the meat keep disappearing.

Why swapping side dish combinations is half the fun

Mat Chandeul's side dishes are honestly the real deal. It's not just the meat that's good — there are so many side dishes to pair with it that switching combinations with every bite is half the fun haha.

Everything is delicious, so no matter how much meat you pile on top of different side dishes, you never get tired of it. Eating it with grilled baek-kimchi one bite, then pickles the next, then wrapping it with scallion salad, then trying another side... in the end, the meat just keeps going in 🤤.

It's a Tuesday evening... and I have work tomorrow... but how am I supposed to resist soju with a spread like this haha.

And on one side of the grill, the rice cakes and potatoes cooked golden brown were also a treat. Crispy outside, chewy rice cake inside, and golden potatoes on top — even feeling full, I kept reaching for more.

Second visit verdict: is Mat Chandeul worth it near Moran Station?

Next to the register, there was also deodorizer, coffee, and lollipops set out! Mat Chandeul really is Mat Chandeul — even on my second visit, it was just as satisfying!

This is the kind of place that made me reflect on ever thinking all pork belly restaurants are the same haha. The meat is delicious, it's grilled for you so it's fuss-free, and even the side dishes are great — this is exactly the spot to go to when you want pork belly.
