When you think of Sindang-dong, does tteokbokki come to mind first for everyone? Hahaha 👀 It has become known as “Hipdang-dong” lately, with so many trendy spots popping up, but there are definitely days after work or on weekends when you just want something rich and fatty, right? Hahaha I ate so incredibly well on my last visit that I kept saying I had to come back—and I finally did! This is Jinseong Hanwoo Gopchang Sindang Direct Branch, a Sindang Station favorite and a truly legit gopchang spot where the waiting line is famous for never letting up, haha 🍀 From hanwoo gopchang to kimchi and kkakdugi yangbap, I demolished it all properly! ✨🥩🔥🥢

Jinseong Hanwoo Gopchang Sindang Direct Branch is practically right in front of Sindang Station on Lines 2 and 6. With rows of round metal tables, it has that casual, lively old-school restaurant feel, and the delicious smell wafts all the way out to the street and makes you want to walk straight in, haha.

When should you avoid the weekday evening wait?
I arrived around 6:30 after work on a Wednesday, and because it was a weekday, I thought there would not be much of a wait, you know? But I was shocked to find the place already completely packed with diners, haha. Even on a random weekday evening, totally full! Hahaha
As soon as you arrive, quickly write your name and party size on the waiting board by the entrance! If you are not there or do not answer the phone when your name is called, they move straight to the next party. Everyone in your group must be present to enter, so make sure to wait nearby. On weekday evenings, it fills up from around 6:10–6:20 right after work, and 7:00–8:30 is peak time! Since many people drink, table turnover tends to be long—about one to one and a half hours. They open from noon, so on weekend afternoons or at an in-between time, you can get in immediately without waiting! For dinner, I recommend aiming for the first seating between 5:30 and 6:00 on a weekday, or a later dinner after 8:40 when the first wave leaves.
How I ordered the hanwoo gopchang, daechang, and makchang

We settled in and looked over the menu! It is wonderfully simple, with just three choices: hanwoo gopchang (beef small intestine), hanwoo daechang (beef large intestine), and beef makchang (beef abomasum). Even though it is domestic hanwoo beef intestine delivered fresh every day, a serving is priced in the high ₩10,000 range, so I can totally recommend this value-for-money spot to anyone looking for affordable beef intestines, haha.
And one genuinely thoughtful thing about Jinseong Hanwoo Gopchang is that, on your first order, you can get one serving of each type! So we started with one serving each of gopchang, daechang, and makchang, then decided we would add more of whichever we liked best. We saved the kkakdugi yangbap (diced radish kimchi fried rice with beef tripe) for the end, haha. Once you sit down, they first bring crisp, fragrant seasoned garlic chives. They are delicious to snack on as is, but later they put the whole lot on the grill with the intestines!
Pickled minari garlic sauce and house-made kimchi


Before the serious grilling begins, this place’s signature secret weapons arrive! The first is pickled minari (water parsley) garlic sauce! It is a special sauce generously packed with minced garlic, Cheongyang chili peppers, and fragrant fresh minari. This stuff is seriously magical, haha. Dip the gopchang, daechang, or makchang deeply into it, then pile on minari and chili—the richness gets completely washed away, and you can keep eating forever!

Then they casually hand you a note saying, “If it is not delicious, we will refund you,” hahaha. What is this chef confidence? Hahahaha With that much swagger, it has to be good, right? Haha


The second secret weapon is three kinds of house-made kimchi! They make scallion kimchi, gat kimchi (mustard-leaf kimchi), and altari kimchi (young radish kimchi) in-house, and they are all seriously, seriously delicious!!

A staff member snips everything into easy-to-eat pieces with scissors. The refreshing altari kimchi is great too, but the pungent, tangy, deeply fermented scallion kimchi is the real star ㅠㅠ You absolutely have to grill this later in the gopchang fat!

They also bring fluffy steamed egg as a basic side, so it was perfect for soothing my stomach while the intestines cooked, haha.
How did the three kinds of gopchang taste?


Finally, our big platter arrived! The grill was loaded with hanwoo gopchang, daechang, makchang, bean sprouts, garlic chives, potatoes, and rice cakes—such a generous spread.

Jinseong Hanwoo Gopchang sets a dedicated timer while grilling! When it beeps, a staff member comes over, flips everything neatly, and cuts it into bite-size pieces. Because they cook it at exactly the right time, the filling does not spill out, and it comes out perfectly crisp outside and tender inside!

They piled pungent scallion kimchi and garlic chives onto one side of the grill, where everything sizzled away... Wow, even writing this post now, my mouth is watering for real, hahahaha. The visuals are genuinely next-level ㅠㅠ


The potatoes soaking up all that beef fat and crisping up were insanely good, and when you wrap gopchang with tangy scallion kimchi sizzling in the fat, what even is greasiness...? Haha. The first bite has to be gopchang! The moment you bite in, its nutty, rich filling bursts out and fills your mouth, with zero gaminess or off smell ㅠㅠ Dip it deeply in the pickled minari garlic sauce and the seasoning is just perfect!

Daechang—what is there even to say... haha. The moment it goes into your mouth, it just melts away. At places that do not trim the fat properly, it can get greasy and overwhelming, but here the rich, nutty flavor bursts out more and more as you chew. Truly excellent!

Makchang can make your jaw ache at places where it is tough, but not here at all—it has such a lovely chewy texture. If you enjoy something with a good bite, you will absolutely love the makchang!
Extra hanwoo gopchang and a kkakdugi yangbap finale
You all know that interrupting the flow of a meal is a crime, right? ^^ Haha. We immediately added one more serving of the most delicious item, the hanwoo gopchang! Rather than grilling it on a plate with leftovers still on it, they completely changed the grill plate for a fresh one, haha. With a fresh heart and fresh intentions, we happily devoured it all over again.

Chewy gopchang grilled golden brown with garlic chives and grilled scallion kimchi... They say familiar flavors are the scariest, and this was seriously so delicious ㅠㅠ

And then we immediately ordered the K-dessert that you absolutely cannot skip: kkakdugi yangbap!

It comes out already stir-fried in the kitchen, sizzling on a hot cast-iron plate. It is generously filled with finely chopped, crunchy kkakdugi and chewy beef tripe, and with seaweed flakes and egg on top, even the look of it gets your salivary glands going, haha.

The seasoning looked red, so I was a little worried it might be too salty, but I was very wrong, haha. It was not aggressively seasoned at all—just perfectly savory—so even though I was full, I could not stop spooning it up! If you are a fried-rice expert, pressing the rice firmly against the cast-iron plate to make crispy nurungji (scorched rice) is practically the rule, right? Haha. We let it crisp all the way onto the bottom, then scraped it up, and the occasional crunchy kkakdugi with that chewy tripe texture was the ultimate finishing touch!
I fell in love once with the fresh, odor-free quality of the hanwoo gopchang, then fell in love again with the combination of house-made scallion kimchi and minari sauce at this Sindang-dong gem, haha. The prices are kind too, so you can enjoy a generous meal without pressure, and the staff time the grilling perfectly, making it such an easy place to enjoy in Jung-gu!
