It's been a while since I was in Seomyeon haha (everything feels far away except home and work). I went to Sinchon Yangpuni braised ribs near Seomyeon Station. Ugh, eating galbijjim (braised short ribs) after so long was so good. Sinchon Yangpuni is tucked in an alley, and the walk in already feels like you're hunting down a hidden gem!

Is this place famous or something? The whole dining room was packed and tucked in the corner, and I saw a lot of foreign visitors too!? Maybe because I came in the evening — the hall was completely full, no joke. I was so curious how good it could be, hehe 💗

Galbijjim is 14,000 won per person, and you have to order per headcount. You can choose a topping to add on top of the braised ribs — octopus, aged kimchi, handmade pork cutlet, cheese!!! Pick whichever you like and eat it together. Since it was our first visit, we loaded up on toppings haha. We added pork cutlet, cheese, and ramen noodles.

The side dishes looked like this. Wrapping the galbijjim in perilla leaves later was surprisingly tasty haha. The sauce was there to cut through the spiciness~!!

They give you soup as a basic side dish. I came straight after work so I was starving, and the soup hit the spot. Finished the whole bowl, hehe.

We ordered rice balls. Round little rice balls, haven't had those in a while haha. Not the flying fish roe kind — genuinely plain rice balls. Dip them right into the galbijjim broth and it's an amazing combo. Basic is the best.

After a short wait, the galbijjim shows up. The signature of Seomyeon's braised ribs here is that it comes piled high with bean sprouts! You can add extra bean sprouts too — I think it was +2,000 won!?

We added cheese and pork cutlet toppings. As someone who loves cheese, I highly recommend the cheese topping. We picked the base spice level, and since I can't handle spicy food, it was pretty hot for me ㅠ Eating it with cheese made it a bit more bearable!!

The owner separates the bones from the meat at your table

The owner personally handles the galbijjim for you. She gave us time to take photos haha, and then really skillfully separated the meat from the bones so it's easy to eat!? She cut everything into bite-sized pieces after separating it!! I can't even imagine how much meat prep experience she has — she popped the bone and meat apart in one smooth motion!?

Why to order the ramen noodles later

Oh! One thing — I ordered the ramen noodles at the same time as everything else, but you should order it while you're already eating the galbijjim. The noodles get soggy fast ㅠ so eat them quickly hahaha. For noodle add-ons there's also knife-cut noodles and glass noodles!

Handmade pork cutlet topping tastes like kimchi nabe donkatsu

The pork cutlet also comes cut into bite-sized pieces. I'm not a big fan of octopus so I went with the cutlet, and if you like pork cutlet, I recommend it. You get the crispy texture first, then the softened cutlet soaked in the spicy galbijjim sauce, which kind of tastes like kimchi nabe donkatsu (pork cutlet in kimchi hot pot)!! Hahahaha if you like kimchi nabe donkatsu, ordering the cutlet is a must ⭐

Top it off with the cheese topping and that's the whole order done! I thought two of us couldn't finish it all, but we did, haha ㅠㅠ

How hot is spice level 2 if you are weak with chili?

There was more meat than I expected. It felt like the more toppings you order, the tastier it gets? Haha. It was varied, colorful, and really, really delicious. You can choose a spice level from 1 to 4 — I chose the base level 2, and it was still pretty spicy ㅠㅠ (I'm a total spice-wimp!). I ate it going 'hoo hoo!' the whole time hahaha.

Pairing it with perilla leaves and the sauce they give you is such a great combo! Being able to choose whatever topping you want on your galbijjim was what I liked most. If you want to eat Seomyeon-style braised ribs with a variety of toppings, drop by Sinchon Yangpuni!
