Before heading back to Gangneung after our trip, I was looking for a good Busan Station pork soup restaurant to fill us up on a weekday evening, and found Yeongdong Milmyeon & Dwaeji Gukbap close to Busan Station. My friend and I ordered dwaeji gukbap (pork soup) and sundae gukbap (blood sausage soup).

The inside of Yeongdong Milmyeon & Dwaeji Gukbap was more spacious and comfortable than expected. With generous spacing between tables, my friend and I could chat comfortably while eating, and having our travel bags with us didn't cause much trouble getting around.

The basic side dishes — kimchi, cubed radish kimchi, chives, and dried radish strips — paired well with the soup. Aprons were also placed within easy reach. Even a magician like me can't make broth splashes on clothes vanish, so I put mine on ahead of time.

The milky broth was loaded with pork, filling just to look at. The soup was rich yet not overly greasy, and went down clean and smooth with no trace of gamey pork smell.

The meat was thick-cut but not tough. The lean parts had a savory meaty flavor that came through with each chew, while the bits of fat added richness.

I started by tasting the broth plain, then added a little chives and salted shrimp partway through. Stirring in dadegi at the end brought a spicy kick. Starting mild, moving through nuttiness, and finishing spicy felt like a well-composed three-act performance.

Sundae gukbap (blood sausage soup), 10,000 won

The sundae gukbap was noticeably richer and nuttier than the pork soup. The savory broth carried the flavor of the sundae (blood sausage), and each spoonful brought a heavy, satisfying umami.

The sundae was soft but held its shape without falling apart, and grew nuttier the more you chewed. Eaten with the broth, the mildness of the sundae and the depth of the stock blended naturally.

Adding chives brought a fragrant lift, and a bit of dadegi brought out a spicy edge. My friend and I each argued our own dish was better, but since both bowls ended up completely empty, the real winner was Yeongdong Milmyeon & Dwaeji Gukbap.
